How To make Banana Cheesecake
1 10" pie crust, pre-baked
-for 10 minutes 12 oz Cream cheese
1 1/2 c Plain yogurt
2 c Pureed bananas
-(4 medium bananas) 2 Eggs (opt)
1/4 c Honey (opt)
Blend all the ingredients in the blender until smooth and creamy. Pour into the pre-baked pie crust and bake for 30 minutes or until set. Allow to cool before serving. You can top with a layer of yogurt and decorate with any fresh fruit (try a mixture of strawberry and banana slices). Serve well chilled. Without the eggs and honey, each serving will contain: 410 calories, 49 milligrams cholesterol, 18 grams fat, 11 grams protein.

Banana Cheesecake
Banana Cheesecake is a class act! This cheesecake also has star quality due to its rich flavor and creamy texture of a traditional cheesecake paired with the delicious bananas delicately supported by the slight crunchy texture of its crust. When bananas are pureed (as in this recipe) they take on a wonderful texture that blends well with cream cheese, sugar, eggs and other flavorful ingredients. All of these ingredients combined makes for a superior balance of flavors and one great cheesecake that is sure to please any cheesecake enthusiast.
Here is the recipe:
For the crust:
192g/ 1.5 cups crushed tea biscuits
75g/ 1/3 cup unsalted butter (melted)
2g/ 1/2 tsp ground nutmeg
28g/ 2 tbsp. granulated sugar
For the banana cheesecake filing:
680g/ 3-8oz packets cream cheese (room temperature)
150g/ 2/3 cup granulated sugar
120g/ 1/2 cup sour cream
3 eggs
14g/ 1 tbsp. banana extract
220g/ 1 cup banana puree
28g/ 2 tbsp. cornstarch
58g/ 1/4 cup heavy cream
Note: Pour 28g/ 2 tbsp. lemon juice over bananas to avoid browning before adding to cheesecake batter.
Bake @ 350F/ 176C for 50 minutes'
Turn oven to OFF and allow to rest in oven for 30 minutes.
Remove from oven allow to cool at room temperature for about 60 minutes.
Place cheesecake in refrigerator for at least 6 hours/overnight to set up.
For the topping:
2g/ 1/2 tsp vanilla extract
42g/ 2 tbsp. unsalted butter
132g/ 2/3 cup granulated sugar
28g/ 2 tbsp. whole milk
42g/ 3 tbsp. water
1g/ 1/4 tsp salt
3 medium bananas (sliced for topping cheesecake0
Decorate cheesecake with banana slices.
Drizzle caramel sauce over cheesecake servings and serve.
