How To make Caramelized Banana Cheesecake
3/4 up cup pecan halves
2 tablespoons butter
1/4 cup packed light brown sugar
2 medium bananas
thinly sliced
2 teaspoons dark rum :
optional
2 8 oz cream cheese -- softened
1 1/2 cups sugar
3 large eggs - room temp -- slightly beaten
1 tablespoon heavy cream
1 teaspoon vanilla extract
Preheat oven to 325 degrees. Place pecans on baking sheet; toast in oven about 8 minutes. Check frequently to avoid burning; set aside. Leave oven on. Melt 1 tbl. of the butter in non-stick skillet over medium heat. Stir in brown sugar; cook, stirring frequently, until melted, about 6 minutes. Add 2 sliced bananas; cook until bananas are caramelized and soft enough to mash with back of spoon. Remove from heat; set aside. Stir in rum, if using combine cream cheese and 1c of sugar in large bowl of electric mixer. Beat until completely blended. Add sour cream, eggs, vanilla and heavy cream, add caramelized banana mixture; beat until incorporated. Put remaining tbl. of butter, remaining 1/2 c sugar and toasted pecans in food processor fitted with metal blade. Process until finely ground; press on bottom of ungreased 8-inch springform pan. Pack down firmly using palm of hand. Pour filling mixture over crust. Place pan inside larger pan and put on oven rack. Add water to depth of 2 inches. Bake until firm to touch, about 1-1/2 hours.Remove from oven; let sit on wire rack 1 hour. Refrigerate, covered, at least 3 hours or overnight before serving.

.Coconut Oil (or Butter) 70 g

NO BAKE BANANA CHEESECAKE
Make one of the most yummy goodies in your own kitchen and the no bake banana cheesecake is one of them. It is simple to make for dessert and any occasion and you can enjoy this mouth watering goodness with friends and family.
Ingredients:
Base:
150 grams digestive biscuits
2 Tbsp brown sugar
1/4 cup melted unsalted butter
Filling
2 cups cream cheese
1 cup castor sugar
1 cup whipping cream
3 ripe bananas
2 Tbsp lemon juice
Toppings
1 ripe banana, peeled and sliced
1 Tbsp butter
2 Tbsp lemon juice
3 1/2 Tbsp castor sugar
Directions:
1. Crush the digestive biscuit using a food processor or blender or place the biscuits in a bag and crush using a rolling pin. Pour the biscuit crumbs into a mixing bowl and add the butter and sugar. Mix until well combined and pour the mixture into a spring form pan and set it aside in the fridge for 30 minutes.
2. In a medium sized skillet melt 1 Tbsp of butter and add sugar, over medium heat until sugar is dissolved and mixture begins to brown. Add the banana slices and stir fry until caramelized but still firm. Lower heat and add lemon juice then stir for another 2 minutes. Remove from the heat, cool and set aside.
3. In a food processor or blender, blend 3 bananas and set aside.
4. In a separate bowl add 2 cups of softened cream cheese, 1 cup whipping cream, 1 cup castor sugar and mix well using an electric whisk until it's nice and creamy. Then add the banana puree and lemon juice and mix well.
5. Pour the mixture into a previously prepared base and shake to flatten and release air. Then pour the caramelized bananas on top and spread evenly. Chill in the fridge for 4 hours or overnight.
