How To make Banana Brunch Coffeecake
2 med ripe bananas
1 pkg yellow cake mix
1 pkg instant vanilla pudding mix (4 servings)
1/2 cup oil
4 eggs
1 tsp vanilla
1/2 cup almonds
chopped
1/3 cup packed brown sugar
1 tsp cinnamon
1/2 tsp nutmeg
confectioner's sugar, sliced banana, raspberries, and fresh mint sprigs :
if desired
Preheat oven to 300F. Grease 3-quart fluted cake pan. Puree bananas to make 1 cup. Combine with cake mix, pudding mix, oil, eggs and vanilla in large mixing bowl. Mix well, beating at medium speed of electric mixer, 8 minutes, scraping side of bowl occasionally. Combine almonds, brown sugar, cinnamon and nutmeg. Pour half the cake batter into prepared pan. Sprinkle with sugar mixture. Cover with remaining batter. Using knife, swirl batter in figure-eight patterns through layers; do not overmix. Bake in preheated oven 55 to 60 minutes. Cool in pan on wire rack 10 minutes. Invert onto rack to finish cooling. Dust with confectioner's sugar. Garnish with sliced bananas, raspberries and fresh mint, if desired. Dip banana slices in diluted lemon juice if not using immediately.

Streusel
½ cup packed dark brown sugar
¼ cup all-purpose flour
1 tsp ground cinnamon
3 Tbsp unsalted butter, melted
¾ cup chopped pecans
Cake
2 cup all-purpose flour
1 Tbsp baking powder
1 tsp salt
½ tsp baking soda
¼ tsp ground allspice
½ cup unsalted butter, melted
1 ¼ cup sugar
1 ½ cup sour cream
2 large eggs
2 tsp vanilla extract
Directions
Streusel
1. Preheat the oven to 350 F and grease a 9-inch square pan.
2. For the streusel, combine the brown sugar, flour, and cinnamon and stir in the melted butter until evenly combined. Stir in the pecans and set aside.
Cake
1. For the cake, sift the flour, baking powder, salt, baking soda and allspice. In a separate bowl, whisk the melted butter, sugar, sour cream, eggs and vanilla. Stir this into the flour mixture until evenly blended. Spread half of the batter into the prepared pan and sprinkle half of the streusel on top. Use a skewer or paring knife to swirl the streusel in a bit. Top with the remaining batter, spread and then top the cake with the remaining streusel, giving the cake another little swirl.
2. Bake the cake for 45 to 55 minutes, until a tester inserted in the centre of the cake comes out clean. Cool the cake in the pan to room temperature before slicing.
3. The cake will keep, well wrapped and unrefrigerated for up to 3 days.

What ingredients you need to make banana crumb cake:
- Cold unsalted butter – cut into small cubes and you use vegan butter to keep this dairy-free if you want too!
- Gluten-free all purpose flour – if not gluten-free than you can use an all-purpose flour instead too
- Coconut sugar – I recommend coconut sugar as the unrefined sugar option here for the cake and the flavors and textures together are delicious!
- Cinnamon – lots and lots of cinnamon is needed here!!
- Eggs – I haven’t tested a flax egg or egg replacer but it should work well
- Milk of choice – you can use any milk you want! Coconut, almond, cow’s milk, etc.
- Bananas – ripe bananas are best. The kind of freckled you’d use for banana bread
How to make banana crumb cake:
- Preheat oven to 350 degrees F and grease an 8 or 9-inch round cake pan well
- In a medium bowl, use two forks to crumble together the cold butter cubes, flour, sugar, and cinnamon until the mixture resembles a crumbly topping. Set aside the crumb mixture
- In a large bowl, cream softened butter on medium with hand mixer until creamy
- Add the sugar and mix for another minute, until well incorporated
- Then add the eggs, vanilla, milk and mashed bananas and mix just until ingredients are combined
- Add in flour, baking powder and cinnamon and mix until fully combine
- Pour cake mixture into the prepared baking dish and top with the crumb mixture
- Bake for 50-55 minutes, until a toothpick comes out clean
- Next make the glaze by whisking together the powdered sugar and milk
- Cool the cake at room temperature for 5-10 minutes before drizzling the glaze over the top then slice and enjoy!

Maida or All purpose flour- 1 cup
Banana- 2 medium sized ripe
Instant Coffee Powder- 1/2 tsp
Powdered Sugar- 1/2 cup
Milk- 3 tbsp
Refined oil- 1/4 cup
Baking powder- 1 tsp
Baking soda- 1/4 tsp
