How To make Sourdough Banana Pancakes
2 c Unbleached pancake mix
1 Egg lightly beaten
6 tb Yoghurt
Buttermilk, as desired Skim milk, as desired 1 Banana, sliced thin
Mix the above with equal amounts of buttermilk and skim milk, with the total amount determined by desired thinness or thickness of mix. (It should not be too thin.) As it is ladled out, in pan or griddle, apply thinly [sic] sliced bananas on uncooked side. Turn when need [sic] to brown other side. banana caramel : 1/2 cup sugar plus 1 mashed banana
place sugar in pot on hot plate. do not stir. when it starts to melt and bubble add banana and stir. be quick else will burn or become bitter.

Sourdough Discard Pancakes
Don’t throw the discard away when you feed your starter! Make pancakes instead!
These were so fluffy and delicious and naturally sweetened with banana (but a little maple syrup on top doesn’t hurt) - honestly paleo pancakes have nothing on these…
(makes 2 servings)
Ingredients:
1 banana
2 eggs
1 cup sourdough starter/discard
optional: 1/4 tsp baking powder
Fresh bloobs
Ghee for cooking
Maple syrup and jam for topping
Mash the banana in a large bowl then mix in the egg. Add the sourdough discard and baking powder if using and mix well to fully combine
Heat some ghee in a pan over medium heat and, once hot, add the batter. Throw some bloobs on there If you’d like and flip once it starts to bubble
Add more ghee every time you add a new batch of pancakes to prevent burning
Top with maple syrup and some homemade jam if you have it!

How to use your sourdough discard when feeding your starter! Or how to use your sourdough starter if you never dare to make sourdough bread! This recipe is totally worth having a sourdough starter in your fridge!
INGREDIENTS:
3 bananas
3 eggs
1 cup of sourdough starter
Mix well
In another bowl
1 cup flour
3/4 tsp salt
1 tsp baking powder
Mix well and add to wet mixture
And mix briefly until flour is incorporated
Add 1 cup of chocolate chips if you want

Here are some of my favorite ways to use my sourdough starter discard. A real deal sourdough hack, to using pretty much all of your sourdough starter while leaving just enough to feed it.

Banana Bread:
1 cup (224g) unsalted butter
1 1/2 cups (360g) granulated sugar
2 cups (300g) all purpose flour
1 teaspoon (5g) baking soda
1/2 (3g) teaspoon kosher salt
3 bananas (ideally overripe) mashed with a fork
2 whole eggs
1 teaspoon (4g) vanilla extract
1/2 cup (145g) mature sourdough starter
Pancakes:
1.5 cups (225g) all purpose flour
3 tablespoons (40g) brown sugar
2 teaspoons (8g) baking powder
1 teaspoon (6g) baking soda
1/2 teaspoon (3g) kosher salt
1 cup (215g) milk or almond milk
1 egg
1/2 cup (145g) mature sourdough starter
Cookies:
(use this recipe and add 1/4 cup (72g) mature sourdough starter to the dough)
BANANA PANCAKES with sourdough discard
Sourdough discard banana pancake recipe adapted by Little Spoon Farm:
*Substituted half of flour with Buckwheat flour and added banana slices!
*I have also done this recipe with a flax-egg instead of a regular egg if you are vegan. The substitution has worked great for me!
