How to make Banana Macadamia Nut Pancakes like Boots and Kimo's Homestyle Kitchen in O'ahu Hawaii
Boots and Kimo's Homestyle Kitchen is a charming restaurant on the island of O'ahu, Hawaii and it is home to the world famous banana macadamia nut pancakes. Try this simple and easy copycat recipe for these unbelievably yummy pancakes!
Banana Macadamia Nut Pancakes (Boots and Kimo’s copycat recipe)
Banana Pancakes
1 cup flour
2 teaspoons baking powder
2 tablespoons vegetable oil
1 tablespoon sugar
Pinch of salt
1 cup buttermilk
2 bananas
1 egg
Method:
In a large bowl mash the two bananas
Add the egg, buttermilk, vegetable oil and beat together with hand mixer
Then add sugar, a pinch of salt, baking powder and the flour; fold in gently with a spatula until just combined. The batter will be a little chunky.
Macadamia Nut Sauce
1 tsp of vanilla extract
1 cup milk
3 Tbsp of sugar
1 tbsp flour
1 tbsp butter
4 tbsp of ground macadamia nuts
Method:
In a small pan, add vanilla extract, milk, and sugar and stir over medium heat.
Add one tbsp of flour and stir
Then add one tbsp of butter while constantly whisking.
Test the viscosity of the sauce by seeing if it costs the back of a wooden spoon; if it doesn’t coat the back of a wooden spoon add another tbsp of flour and another table spoon of butter while constantly whisking.
Cook pancakes on a non-stick pan at med/med high heat.
Using a scooper, put two scoops on the pan
Cook for 2 minutes on one side; then flip and do 2 minutes on the other side — give or take a minute or two.
Stack some pancakes and drizzle some macadamia nut sauce on top and enjoy heaven!!

Banana Nut Pancakes
Time: 15 minutes
Makes 12-15 pancakes.
Ingredients:
1 well-ripened banana
2 ripe bananas sliced for serving.
2 large eggs
1 1/2 cups all purpose flour
1 cup + 2 TBSP milk
1/2 cup chopped nuts + whole nuts for toppings pancakes
3 TBSP butter, melted
2 TBSP sugar
2 1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
1 tsp vanilla extract
Chocolate syrup
Mix flour, sugar, salt and baking power in a bowl, set aside. In a separate bowl, mash the banana with a fork. Add, milk, eggs, vanilla, butter and cinnamon and whisk to combine. Fold the wet ingredients into the dry. Fold in the nuts. Be careful not to overmix.
Melt some butter on a griddle or skillet over medium heat. Drop 1/4 cup of batter in batches. Top with sliced bananas, chocolate syrup and whole nuts. Serve immediately.

These delicious breakfast pancakes are enriched with wheat bran, bananas and milk and are perfect for brunch. Bananas and milk provide you with all the energy needed to carry out your regular activities. They also increase the calcium and protein levels of the recipe. Most of us consider waffles and pancakes to be really sinful indulgences. It is actually the ingredients we eat with them like butter, jam or honey that actually make them full of calories. Go ahead and dab a little butter on your pancakes but remember it is an indulgence that should not be overdone.
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes 6 pancakes
¼ cup mashed bananas
½ cup finely chopped walnuts (akhrot)
1 cup whole wheat flour (gehunkaatta)
2 tbsp wheat bran
½ cup milk
4 tbsp castor sugar
½ tsp vanilla essence
½ tsp baking powder
1 tbsp melted butter
3tsp butter to cook
For serving
Sliced bananas
Honey
1. Combine all the ingredients in a deep bowl and mix well.
2. Add ½ cup of water, and whisk well till no lumps remain.
3. Heat a non-stick tava(griddle), pour a portion of the batter into a 100mm (4) diameter thick circle.
4. Put ½ tsp butter on the edges and cook each pancake on a medium flame till they turn golden brown in colour on both the sides.
5. Repeat steps 3 and 4 to make 5 more pancakes.
Serve immediately with banana slices and drizzled with honey.
