How To make Banana& Lemon Pancakes
2 tb Sugar
1 t Cinnamon
1 ea Grating of nutmeg
1 pn Salt
1 1/2 tb Lemon juice
1 lb Ripe bananas
Oil, as required 1 ea Crepe recipe, see above
2 tb Margarine, melted
Icing sugar, as requiring Lemon wedges for garnish
Mix the sugar, nutmeg, salt & lemon juice in a small bowl. Slice the bananas & mix them gently in the lemon-spice mixture. Heat a skillet & add a little vegetable oil. Fry each crepe on both sides. Spread each cooked crepe with the melted margarine & some of the banana mixture. Keep everything warm until ready to serve. Sprinkle the crepes with icing sugar & garnish with lemon wedges.

INGREDIENTS:
1.5 cups self raising flour
2.5 spoons sugar
Pinch of salt
Zest of 1 lemon
1 egg
1/2 Cup water
1/2 cup milk
1-2 Tbsp lemon juice
2 Tbsp cooking oil
PS: I've used the standard measuring cup (250ml) you can also use mkebe ya yoghurt(250ml)

Banana Bread
2-3 ripe bananas
2 eggs
1/2 cup almond milk
1/3 cup unsweetened applesauce
1 tsp vanilla
1/2 cup swerve brown sugar
1 tsp cinnamon
2 cups kodiak buttermilk mix
Optional: walnuts
Bake at 350 40-45 minutes.
The entire batch is 19 SP on blue! I divided mine into 3 mini loaf pans and tracked each loaf as 7 SP (just rounded up to make it easy)
Original recipe before revisions:
Sheet Pancake
2 egg
1/4 cup unsweetened applesauce
1/2 cup nonfat Greek yogurt
1 cup almond milk
1/4 swerve brown sugar
1 tsp baking powder
2 cups Kodiak flapjack & waffle mix (I used cinnamon oat)
Blueberries
Bake at 375 for 20-25 minutes
I cut the entire pan into 16 equal pieces and each piece came out to be 2 SP on the blue plan!
Original recipe before revisions:
Lemon BB muffins
2 eggs
1 cup almond milk
1/3 cup nonfat Greek yogurt
1 box kodiak lemon bb mix
Bake at 375 for 12-15 minutes.
Each muffin is 4 SP on the blue plan!

You’ll need
2 eggs
2 tbsp granulated sugar
200 ml milk
1 + ¼ cups all-purpose flour
2 tsp baking powder
2 tsp vanilla powder
To cook;
Oil
1 cup = 240 ml
Here’s how
1- Whisk together 2 eggs and 2 tablespoons of granulated sugar.
2- Add 200 ml of milk, 1 + ¼ cup of all-purpose flour, 2 tsp of baking powder and 2 tsp vanilla powder. Beat until you have a smooth batter.
3- Heat a lightly oiled non-stick frying pan over a medium heat.
4- Gently pour about 1 tbsp of batter onto the hot pan.
5- Wait until the bubbles form on the surface and once they start popping, flip the pancake over and cook until both sides are golden.
6- Repeat until all the batter is used up.
7- Once both sides are golden, transfer to a serving plate!
