How To make Baked Glazed Ham
2 tablespoons sugar
1 tablespoon chili powder
1 tablespoon paprika
1 teaspoon cumin
1/2 teaspoon cinnamon
1/4 teaspoon cloves
1 6-7 pounds fully cooked bone-in smoked ham, shank -- or
butt portion ** GLAZE ** 1/4 cup damson plum or peach preserves
2 tablespoons orange juice
Heat oven to 375. Combine sugar, chili powder, paprika, cumin, cinnamon and cloves in small bowl. Score top and sides of ham with knife in a crisscross pattern. Sprinkle with spice mixture. Place ham in a 17x11-inch roasting pan. Bake 1 1/2 to 2 hours until instant-read thermometer in center registers 140. (After 1 hour, cover ham loosely with foil to prevent over-browning). Combine preserves and orange juice in small cup. Uncover ham; brush with preserves. Bake 5 minutes more. Let stand 15 minutes. Makes 8 to 12 servings. A delicious ham turns any gathering into a special occasion. It's easy to prepare a ham, too. Place the ham on a rack in a roasting pan. Next, insert a meat thermometer. Insert the thermometer into the meat, making sure it's not touching bone, or you won't get an accurate temperature reading. Bake the ham in a 325-degree oven for about one hour and 45 minutes. While the ham is baking, make a flavorful glaze. When the baking time is up, remove the ham from the oven, and brush with some of the glaze. Bake the ham 30 minutes more, or until the thermometer reads 130 degrees and the ham is ready for carving.

Baked, Whole Bone-In Ham with Brown Sugar Glaze
The secret to making a good ham? The ham! Truly, no glaze or cooking technique will make a bad ham better. I am a huge fan of Dakin Farm hams from Vermont (no affiliation, just a longtime fan after years of tasting their products).
Here are some best practices:
• Cook 10 minutes a pound at 325ºF.
• Cook fat side up covered in foil with a little bit of water in the pan.
• During the last 30 minutes, remove the foil, crank the heat up to 425ºF, brush with a simple glaze at least twice.
• Let rest 20 minutes before carving.
