Amazing Glazed Ham

Ingredients
One 7- to 9-pound fully cooked spiral-cut ham
1 cup dark brown sugar
1/4 cup grainy brown mustard
2 tablespoons apple cider vinegar
1/2 teaspoon ground cinnamon
1/2 teaspoon paprika
1/2 teaspoon chili powder
3 medium oranges, zested and juiced
2 cloves garlic, grated
Kosher salt and freshly ground black pepper
Directions
Let the ham sit at room temperature for 1 hour before baking. This will allow it to cook evenly.
Preheat the oven to 325 degrees F.
Make the glaze: In a medium pot over medium-high heat, combine the brown sugar, mustard, vinegar, cinnamon, paprika, chili powder, orange zest and juice, garlic and some salt and pepper. Bring to a gentle boil and cook for 10 minutes, stirring occasionally.
Place a rack in a roasting pan. Put the ham on the rack large open-face down (so the spiral cuts are stacked on top of one another).
Brush half of the glaze over the surface of the ham, getting it between the slices as much as you can.
Pour about an inch of water in the base of the roasting pan; the water should not touch the ham. Tent the pan loosely with aluminum foil and bake for about 10 minutes per pound (1 hour 10 minutes to 1 hour 25 minutes).
Take the ham out of the oven and remove the foil. Raise the oven temperature to 375 degrees F. Brush half of the remaining glaze on the ham. When the oven is up to temperature, return the ham, uncovered, and bake for 15 minutes. Brush the remaining glaze over the ham and cook for another 15 minutes.
Carefully transfer the ham to a platter. Serve right away, or cover with foil and take it to your gathering!

Glaze:
1/4 cup apple juice
1 cup brown sugar
1 tbsp butter
1/4 cup honey
1/4 cup Apple Jelly
2 tbsp sriracha
2 tbsp Dijon Mustard
pinch of cinnamon and nutmeg
Orange Zest
Directions:
Preheat oven to 325 degrees. Place Ham in roasting pan or foil pan and cover. Place in oven for about 1-2 hours or until it gets up to about 135-145 degrees internal temp. Prep glaze in a sauce pan - whisking until smooth. Pour glaze over ham and place back in the oven. Re-apply by basting every 5-10 minutes until the ham reaches 165 degrees internal temp. Total cook time is about 15 minutes per pound.

BROWN SUGAR & HONEY GLAZED BAKED HAM
Arrange rack in lower third of oven. Preheat oven to 325 degrees F.
1 (10-pound) smoked, bone-in ham
1 cup honey
1/4 cup packed brown sugar
8 tablespoons unsalted butter
1. Remove plastic packaging or netting from the ham. Rise ham under running cool water. Pat dry with paper towels.
2. Trim away any excess fat from ham leaving about a 1/4-inch layer all over. Set ham aside to rest at room temperature for 30 minutes.
3. Line a sided baking sheet with heavy duty aluminum foil or several layer of regular aluminum foil (it will make clean up much easier). Place the ham, cut side down on baking sheet. Add 1/2 cup water around ham. Tightly cover ham with foil.
4. Bake 2 hours.
5. During last 15 minutes of cooking. In a small skillet or sauce pan, over medium heat, add the butter, brown sugar and honey. Stirring occasionally until brown sugar has dissolved, about 3-5 minutes. Set aside until lukewarm.
6. Remove ham from oven. Increase oven temperature to 425 degrees F. Remove foil from ham. Using a sharp knife score a 1-inch wide diamond pattern over the entire ham, Make sure not to cut more then 1/2-inch deep into ham.
7. Brush ham with a quarter of the honey glaze (about 1/4 cup), return to oven, bake uncovered for 15 minutes. Again remove ham from oven to brush with 1/4 cup of glaze and bake another 15 minutes. Repeat this two more times until the ham has baked a total of 1 hour.
8. Let the ham rest for 30-40 minutes before slicing.

INGREDIENTS
8 to 10 lbs (4.5 kg) Fully Cooked Ham ( I used bone-in ham)
Two 20 oz (567 g) cans of Pineapple slices
12 oz (354 ml) pineapple juice (I used juice from cans)
8 oz to 10 oz (238 g) jar of Maraschino cherries
2 oz (60 ml) of juice from cherries
2 Tbsp (30 ml) apple cider vinegar (or lemon juice)
1 packed cup (200 g) light brown sugar (dark sugar works too)
1/2 cup (170 g) honey
1 tsp ground cinnamon
1/2 tsp ground cloves
toothpicks for pineapple slices and cherries
***TIPS***
For a bone-in fully cooked ham, cook 15 to 20 minutes per pound or
30 to 40 minutes per kilogram
For fully cooked boneless spiral cut ham, cook 10 minutes per pound
Baste every 20 to 30 minutes to help keep the meat moist
FOR A SHINEY GLAZED HAM LOOK
add 1/2 cup (170 g) of honey and 1/2 cup (100 g) brown sugar to the exterior of ham,
before adding pineapples and cherries
