Mideast Eats: Baccalà Alla Livornese
This week we meet a Jewish Italian chef from the Tuscan port city of Livorno, which is home to a large Jewish population, descended from Jews expelled during the Spanish Inquisition. Their presence in Livorno gave rise to a unique cuisine that combines Sephardic Jewish traditions with Italian ingredients. Let's have a taste.
Baked Cod with Lemon, Capers and Thyme
This is a Mediterranean style cod dinner, made with spinach or rocket, cherry tomatoes, capers, garlic and thyme - flavours which work really well together. It takes about 5 mins to prep and 20 minutes to cook. I serve it with simple boiled potatoes.
Cod is very low in fat and a good source of Protein. It is also a good source of leucine, an amino acid that is needed to trigger muscle synthesis.
