1 tsp dry oregano
1/8 tsp chili flakes
1 tsp sugar

Italian CHICKEN CACCIATORE || ONE-PAN Cooked Chicken With DELICIOUS SAUCE. Recipe by Always Yummy!
Chicken Cacciatore is a famous Italian dish of a chicken fried until golden crust and braised with tomatoes, mushroom and sweet pepper. One of legends says that wives cooked a chicken in the way a wildfowl was cooked when hunters came home without a gain. Hunter-style chicken is a perfect meal for a family or friendly dinner or as a main course for a festive one.

✅ Ingredients:
• chicken – 2 lb /1 kg
• bulb onion – 8 oz /240 g
• red bell pepper – 6 oz /180 g
• mushrooms – 9 oz /250 g
• chopped tomatoes – 24 oz /700 g
• garlic – 2 cloves
• dry white wine – 3 fl oz /100 ml
• vegetable oil – 2 tbsp
• dried thyme – 1 tsp
• dried oregano – 1 tsp
• sugar – 1 tsp
• ground black pepper – ½ tsp
• salt – 1 tsp
✅ You will need:
• carving board
• skillet
???? Preparation:
1. Wash and dry out the chicken, cut the bulb onion and bell pepper into strips, mince the garlic, cut the mushrooms into slices.
2. Heat the vegetable oil in a pan over medium heat.
3. Lay out the chicken pieces and fry over medium heat for 3-4 minutes on each side until golden crust.
4. Take out the chicken into a bowl.
5. Lay out the cut bulb onion, bell pepper and mushrooms into the pan, fry over medium heat for 5 minutes.
6. Add the salt, sugar, pepper, thyme, oregano, garlic and dry wine, stir and braise over low heat for 3 minutes.
7. Add the chopped tomatoes and bring to a boil, cover with a lid and braise over low heat for 7 minutes.
8. Lay out the chicken onto the vegetables in the pan and cover with the lid, braise over low heat for 15 minutes, then flip the chicken, cover the lid and braise for 15 minutes more. Then flip the chicken again and keep braising over low heat for another 5 minutes.
9. Serve the chicken cacciatore hot with potato, pasta or rice.

Chicken Cacciatore:
1 whole Chicken (cutup)
4 cloves Garlic (halved)
2 Onions (sliced)
4-6 Scallions (Green Onions) - bottom portion
1/2 cup Parsley
1/2 cup Basil
2 qts Peeled Plum Tomatoes
1/2 cup Olive Oil
1 tsp Oregano (approx)
Salt & Pepper to taste
Optional:
1 lb Pasta/Linguine
Grated Pecorino Romano (sprinkle on top)

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
