Chicken cacciatore has been reinvented with my 5-star take on the classic favourite. With a combination of bold tomato sauce and luscious porcini mushrooms, this chicken recipe is moist, flavourful, and finger-licking-fabulous.
This is one of my favorite chicken recipes ever.
This Cacciatore Chicken recipes is by far the best chicken casserole I have eaten in my life.

CHICKEN CACCIATORE | Homemade Cacciatore Recipe
INGREDIENTS:
Dried Porcini mushrooms (or fresh if you can get them)
1 x whole organic chicken cut into pieces (or less if you’re not hungry, but you’ll regret not making extra!)
1 glass of white wine
400gr of Italian Tomato Sauce
1 ½ cups of boiling water
2 x garlic cloves
2 x medium sized carrots (diced into small cubes)
2 x celery sticks (diced into small cubes)
Fresh rosemary sprigs
Freshly chopped parsley (to serve)
Extra Virgin Olive Oil (EVOO)
Salt & Pepper
Dried mixed herbs
METHOD:
1. If you are using dried Porcini mushrooms for your chicken cacciatore, put them into a medium size bowl and add 2 x glasses of boiling water. Put this to the side.
2. Put a medium size casserole dish or deep frying pan on the stove at medium heat. Add extra virgin olive oil and leave to warm up.
3. Add 2 x garlic cloves to the pan (leave them whole) and a few sprigs of rosemary.
4. Mix using a wooden spoon and leave to simmer for a minute or so.
5. Add the chicken pieces to the pan, one next to the other and leave to simmer for a few minutes. Once the chicken pieces have begun to brown on one side, turn them over to brown the other side too.
6. Add salt, pepper and dried mix herbs to season. Leave to simmer and turn once again.
7. Add the diced carrot and celery into the pan, making sure the chicken is completely surrounded. You may need to turn it over again.
8. Add 1 ½ glasses of white wine to the chicken cacciatore and leave to simmer, covering the pan with the lid so the aromas are infused into the chicken.
9. After approx. 5 minutes, uncover the pan and add the Italian passata. Use the tongs to move the chicken around and make sure the sauce has spread well throughout the pan.
10. Then, add the porcini mushrooms along with the water into the pan, mix well and leave covered to infuse for at least 4-5 minutes.
11. Uncover the pan and turn the chicken pieces around one last time and leave for another 2-3 minutes.
12. Once the water has evaporated and sauce has thickened, your chicken cacciatore dish is ready to be served!

INGREDIENTS:
- 4 pounds chicken thighs and drumsticks
- 1/4 cup olive oil
- 2 medium onions - sliced
- 1 celery rib chopped
- 2 bell peppers - sliced
- 6 cloves garlic - minced
- 1/2 cup green olives - pitted and chopped
- 1/2 cup black oil-cured olives - rinsed, pitted, and chopped
- 28 ounce can plum tomatoes hand crushed or blender pulsed
- 3 ounces tomato paste
- 3/4 cup dry white wine
- 1/2 cup low sodium chicken stock
- 1/4 cup fresh parsley - minced
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
NOTE:
- In this video, the chicken was braised in the oven. In the print recipe below the step by step instructions are for the stovetop method. Either way will yield excellent results!

CHICKEN CACCIATORE - POLLO ALLA CACCIATORA

Chicken Cacciatore is such a classic, rustic and comforting Italian stew. Made with juicy chicken thighs in a beautiful tomato sauce flavoured with hearty vegetables, herbs, pancetta and olives. Comfort food doesn't get much better than this, serve with creamy polenta or Italian roast potatoes.
Ingredients
8 chicken thighs , skin on and bone in
1 large carrot , finely chopped
1 stick celery , finely chopped
1 onion , finely chopped
2 cloves garlic , finely chopped
½ cup pancetta (80g)
½ cup olives green or black (50g)
1 cup chicken stock low sodium
14.5 oz crushed tomatoes (400g)
½ cup white wine (125ml)
1 large sprig rosemary
1 bay leaf
1 tbsp olive oil
Salt and pepper to taste
Instructions
Heat olive oil in a large deep sided skillet until hot. Sprinkle the chicken with salt then brown the chicken skin side down for 5-7 minutes until golden. Turn the chicken around and brown on the other side for 2 minutes then remove and set aside on a plate. Drain the excess fat from the skillet but don’t wipe it clean.
Add the pancetta to the hot skillet and fry for 2-3 minutes. Next add the finely chopped carrot, celery and onion and saute until soft but not browned around 5 minutes.
Once soft, add the garlic, rosemary and bay and saute for another 2 minutes. Add the white wine and simmer for 1-2 minutes or until you can no longer smell the alcohol.
Add the tomatoes and stock and stir everything together. Finally, add the chicken back to the pot, cover and simmer for 45 minutes.
Uncover add the olives and simmer for a further 10 minutes to reduce the sauce slightly. While the sauce is reducing you can remove the chicken to a tray and place under a broiler (oven-grill) for a couple of minutes to crisp the skin up, this is optional but gives you delicious crispy skin.
Add the chicken back in and serve.

Chicken cacciatore is a delicious dinner that can be served up over either pasta or rice. Your family will love this classic chicken recipe! Bonus: it only takes 30 minutes!

• 2 tablespoons extra virgin olive oil
• 1 tablespoon salted butter
• 6 boneless skinless chicken thighs
• salt to taste
• pepper to taste
• ¼ cup all-purpose flour
• 1 small white onion, diced
• 1 red bell pepper, sliced
• 1 yellow bell pepper, sliced
• 8 ounces mushrooms, sliced
• 6 ounces tomato paste
• 2 teaspoons minced garlic
• 1 tablespoon Italian seasoning
• ¼ teaspoon red pepper flakes, optional
• ½ cup cooking wine
• ¼ cup heavy cream
• 15 ounces crushed tomatoes
• 8 ounces tomato sauce
• 2 tablespoons fresh or dried parsley, for garnish
• 2 tablespoons grated Parmesan cheese

1️⃣ 00:00:16 - In a large skillet heat oil and butter on medium high heat. Season chicken thighs with salt and pepper and coat with flour. Brown chicken in the pan for 3 minutes per side, just until browned. Remove from skillet and set aside.
2️⃣ 00:00:52 - Add onions, peppers, and mushrooms to pan and cook until softened, about 7 to 10 minutes, stirring occasionally. Add in tomato paste, garlic, Italian seasoning, and red pepper flakes and cook 1 to 2 minutes more.
3️⃣ 00:01:40 - Pour in wine, heavy cream, crushed tomatoes, and tomato sauce and stir to combine.
4️⃣ 00:02:02 - Return chicken to pan and let simmer until chicken is cooked through to an internal temperature of 165 degrees Fahrenheit, about 15 minutes. Taste and add salt and pepper as desired.
