Oven Baked Chicken Cacciatore
Easy oven baked chicken cacciatore recipe makes weeknight cooking a breeze! Dump chicken thighs, peppers, onions, and tomatoes in a baking dish and forget about it while your oven does all the work! FULL RECIPE OR BELOW:
1 ¾ pounds boneless skinless chicken thighs
1 teaspoon salt, divided
½ teaspoon pepper, divided
1 ½ teaspoons Italian seasoning, divided
3 cloves garlic, minced
8 ounce mushrooms, sliced
½ large onion, halved and sliced thinly
2 bell peppers (any color), sliced
½ cup red wine (best), white wine, or substitute chicken broth
1 bay leaf
14 ounce can Red Gold® Crushed Tomatoes
14 ounce can Red Gold® Diced Tomatoes, undrained
2 tablespoons capers, drained
2-4 tablespoons Red Gold® Tomato Paste, (optional, for thickening sauce)
For serving: (optional) crushed red pepper, grated parmesan cheese, cooked spaghetti, rice, polenta, or riced cauliflower
Preheat the oven to 375°F. Arrange the chicken in a single layer in a 9X13 inch baking dish.
Sprinkle ½ teaspoon salt, ¼ teaspoon pepper, ½ teaspoon Italian seasoning, and minced garlic over the chicken.
Layer the mushrooms, onions, and peppers over the chicken. Pour the wine or broth over the top and add bay leaf.
Top the veggies with Red Gold® Crushed Tomatoes, Red Gold® Diced Tomatoes, and capers. Sprinkle remaining ½ teaspoon salt, ¼ teaspoon pepper, and 1 teaspoon Italian seasoning over everything.
Bake, uncovered, for 1 hour to 1 hour 15 minutes, or until the chicken is fall-apart tender and the sauce has reduced slightly.
If desired, thicken sauce by removing the chicken with a slotted spoon. Stir in 2-4 tablespoons Red Gold® Tomato Paste into the baking dish with the veggies, and add chicken back to the dish. Serve over cooked spaghetti, rice, polenta, or riced cauliflower.

Learn how to make this easy to make chicken cacciatore recipe. This isn't completely traditional with the absence of a couple of ingredients but I feel this combination of flavours is perfect. Cacciatore means hunter or hunter style and is traditionally made with chicken or rabbit and in this instance we use chicken.

Ingredients -
2 1/2 Tbsp (50ml) - Unrefined Olive Oil
5-6 - Large Chicken Thighs, Bone In & Skin On (Boneless & Skinless Is Fine Too)
2 - Brown (Yellow) Onions, Diced
5 - Garlic Cloves, Crushed & Roughly Chopped
1 - Large Red Bell Pepper (Capsicum), Thinly Sliced or Diced
2 - Carrots, Washed & Thinly Sliced
250g (8.8oz) - Button Mushrooms, Thinly Sliced
5g (0.3oz) - Thyme
7g (0.25oz) - Flat Leaf Parsley, Roughly Chopped
7g (0.25oz) - Basil
1 tsp (0.5g) - Dried Oregano
1 tsp (0.5g) - Dried Rosemary
3 - Dried Bay Leaves
1/2 Cup (125ml) - Red Wine or Chicken Stock
3 Tbsp (42g) - Concentrated Tomato Paste
2 1/2 Cans (1kg) - Canned or Diced Tomatoes
1 tsp (0.5g) - Dried Chilli Flakes
Sugar To Balance Acidity (Optional)
Seasoning To Taste
Notes -
This recipe can contain olives but I feel it's unnecessary in this dish and the flavour is overpowering. If you wish to add olives, add in 100g of halved & pitted kalamata olives.

Mom's Chicken Cacciatore

Ingredients
6 bone-in, skin-on chicken thighs, skin removed
Kosher salt and freshly ground black pepper
1/2 cup all-purpose flour
2 tablespoons olive oil
1 small onion, finely chopped
1/2 pound sliced cremini mushrooms
4 cloves garlic, minced
1 red bell pepper, thinly sliced
1/2 cup dry white wine
1 teaspoon finely chopped fresh oregano
1 teaspoon finely chopped fresh rosemary
One 28-ounce can whole tomatoes, cut up with kitchen shears
3/4 cup halved black olives
2 tablespoons drained capers
1/4 cup torn fresh basil leaves
Directions
Sprinkle the chicken thighs with salt and pepper, then toss them in a bowl with the flour to lightly coat.
Heat the olive oil in a large, wide pot over medium-high heat until shimmering. Add the thighs and cook, turning once, until golden brown on both sides, about 3 minutes per side. Remove the thighs to a plate.
Add the onion and mushrooms to the pot and cook, stirring, until the onion is softened and the mushrooms are lightly golden, about 5 minutes. Add the garlic and bell peppers and cook, stirring, until the peppers are just starting to soften, about 1 minute. Add the wine and bring to a boil, then cook, scraping up any brown bits, until reduced by about half. Add the oregano and rosemary. Add the tomatoes and their juice and bring to a simmer. Add the olives and capers. Return the chicken to the pot, nestling in the sauce. Reduce the heat to keep the sauce at a gentle simmer and cook until the chicken is cooked through, about 25 minutes.
Sprinkle with the basil. Serve immediately.
