How To make Baida Paratha
2 c Flour, whole wheat
2 ts -Salt
4 Eggs; boiled and mashed
2 tb Ghee
1/2 ts Pepper
1 ts Coriander leaves; chopped
-cilantro -Water to knead Ghee; for shallow frying Sift whole wheat flour in bowl with 1 tsp salt. Gradually add water, make a stiff flour. Cover with a damp cloth. Keep aside for 20 minutes. Boil eggs and mash well. Add 1 tsp salt, pepper, coriander and 1 tsp ghee or oil. Mix thoroughly. Knead the dough until smooth. Divide into 8 equal parts and roll out each 4" diameter circle. Place 1 tbsp egg filling in the centre of each circle. Shape them into round balls again. Now roll out each ball on a floured board to a circle of 5" (13 cm) diameter. Rub a little ghee or oil on one side. Heat a griddle, shallow fry each paratha with a little ghee or oil (flip and smear a little ghee on the other side with the back of a spoon). Cook until both sides turn golden brown, turning once or twice.

Egg Paratha - Baida Roti
A perfect paratha with egg and kheema-mince meat. A stretchy dough is made with maida which is stuffed with rich egg and meat. This is a perfect lunch box recipe for your children.
Ingredients:

For the dough :
All purpose flour 1 cup
Salt pinch
Egg Half
Oil for fry
For stuffing :
Onions 1 Number
Salt to taste
Ginger garlic Paste 1/2 tsp
Green Chili 3 Number
Chili powder 1 tsp
Coriander powder 1/2 tsp
Garam masala 1/2 tsp
Mince meat 250 grams
Spring onions 1 tbsp.
Tomato 1 Number
Coriander 1/2 bunch
Mint 1/2 bunch
Directions -- Method:
1. Take a mixing bowl add all purpose flour, salt, mix it and add half an egg and add some water mix this like soft dough add oil and knead the dough and let it rest for 20 minutes.
2. Heat oil in a pan add chopped onions, salt, ginger garlic Paste cook it till its raw flavor is gone then add green Chili, Chili powder, coriander powder, garam masala, add mince meat, cook this it is tender, then add coriander leaves.
3. Roll out the dough into big chapatti and place some mince masala in the center and put some spring onions, tomato pieces, chopped mint and coriander, pour one egg and fold it four sides like a pocket.
4. Heat the griddle and cook the baida roti on both sides.
5. Cut them into 4 pieces, serve it hot.
