How To make Bacony Creamed Spinach
2 pk Frozen spinach (10oz. ea)
6 Bacon strips
1 Garlic clove,minced
1/2 c Onion,chopped
1/2 t Salt
1/8 t White pepper
1 pn Cayenne pepper
2 T Butter
2 T Flour
1 c Half-and-half or milk
1. Cook spinach by boiling or in microwave. Drain well and squeeze out as
much moisture as possible. Chop fine, using food processor of food grinder. 2. Cook bacon in skillet until crisp. Remove and drain. Crumble and
reserve. In about 2 T of the bacon fat, saute garlic and onion over medium heat. When onion is limp, add spinach. Lower heat. Season with salt and peppers; stir well as moisture evaporates from spinach, about 1 minute. Remove from heat. 3. In a separate large skillet, melt butter over medium heat. Sprinkle in
flour, stirring constantly until smooth. Graduallly stir in half-and-half or milk and cook until smooth and bubbly. Stir in spinach mixture and heat through. Remove from heat, stir in reserved bits of bacon, and serve.

(makes 2 portions)
▪225g/8oz very thick cut bacon, diced into small batons
▪Olive oil
▪340g/12oz spaghetti
▪50g or 1/2c aged parmesan, feather shredded
▪50g or 1/2c pecorino romano, feather shredded
▪1 egg + 3 egg yolks
▪2g or 1teas ground black pepper
▪Reserved pasta water
To cook the pasta, bring water to a boil. I’m using a 12” saute for this for faster boiling. Salt water then add spaghetti. Simmer on high for about 8min. When done, noodles should have just a bit of crunch in the middle.
To cook the bacon and prepare the sauce, preheat a large heavy-bottomed pot over low. Add a bit of olive oil to the pot followed by bacon. Allow to render and brown for around 8min, stirring occasionally.
In a separate bowl, mix together cheeses and eggs.
When bacon is rendered and golden, remove it from the pot, and reduce heat to medium low, adding any bacon grease that comes with it back into the pot followed by black pepper. Fry black pepper and stir with wooden spoon, scraping up bacon fond.
At this point, ladle in about 300mL/1.5c pasta water into bacon pot and continue to deglaze up bacon fond. Transfer spaghetti into bacon pot (remembering to save additional pasta water to adjust sauce later).
Stir 100mL/.5c of pasta water together with the egg and cheese mixture.
Add 100mL/.5c of additional pasta water into the spaghetti pot and stir. Simmer pasta in shallow water for about 90 seconds. Taste pasta. It should be al dente. Remove from heat and stir in rendered bacon. Add egg/cheese mixture and stir very well until cheese melts. If needed, return pot to low heat, stirring constantly until cheese is melted and sauce is velvety and creamy. Don’t take it too far or sauce will become gloppy.
Top with a pinch of aged parm and black pepper and serve.

Plant-Based Smoked Spinach & Artichoke Dip with BACON!
Makes one cast iron pan
2 tbsp butter flavour coconut oil
1 onion, finely chopped
2 cloves garlic, finely minced
300g frozen chopped spinach, defrosted with the water squeezed out
227g plant-based cream cheese (we used plain)
200g vegan mozzarella cheese
3 tbsp nutritional yeast
1 tbsp soy sauce
1/2 cup chopped jarred marinated artichoke hearts
1 tbsp your favourite BBQ Rub
1 bay leaf
1/3 cup artificial bacon bits (they’re made of soy and ACTUALLY VEGAN!)
Melt coconut oil in a cast iron pan. Add onions and garlic and cook until fragrant and translucent - about 5-10 minutes. Add the rest of the ingredients, and stir thoroughly. Place over indirect heat in a preheated 350 degree with a few chunks of wood under the lit charcoal (we used apple). Grill until bubbling and piping hot, about 30-35 minutes. Serve with fresh crusty sourdough. THIS DIP IS SO ADDICTING! Serve to any of your non plant-based friends and they’d never know the difference!
