2 Avocados Romaine lettuce leaves 1 ts Salt 1/2 ts White pepper 1/2 ts Dried oregano 1 Cl Garlic; minced 1 Fresh thyme; (optional) 2/3 c Olive oil 1 tb Red wine 1 tb Vinegar Recipe by: "Le Ruth's" Restaurant, New Orleans, LA. Cut the avocados in half and discard the pit. Scoop out the avocado meat with an ice-cream dipper, and shape into little balls. Place them on two plates lined with lettuce leaves. In a small bowl, whisk together the rest of the ingredients, pour over the avocados, and serve.

Here is the recipe for Avocado Whip (serves 8) Ingredients 2 large ripe avacado 1/4 cup onion 3 TBS of cilantro 1 tsp salt or to taste 1 cup of vegan sour cream - I used @good_karma_foods sour cream The juice of 2 limes
How to: 1. Start by peeling two avacados and placing aside. 2.Chop onion and squeeze the juice if two limes 3. Add sour cream, cilantro, lime juice, salt, avocado to a high power led blender. Blend till smooth

Here is recipe for Roasted Potato Wedges Serves 4 Ingredients 4 large russet pototos 3 TBS of oil 1/2 tsp of cumin 1/2 tsp of caynenne pepper 1/2 tsp chili powder 1/2 tsp salt
How to: 1. Start by peeling skin off potatoes. 2. Chop potatoes in 1 inch thick discs and cut in half again to make wedges 3. Place potatoes in salted boiling water for 8 minutes (water should cover potatoes) 4. Remove pot of potatoes from heat and drain water. Gently shake potatoes while they are still in the pot 5. Remove potatoes from pot unto baking sheet. Cover with seasoning and oil. Make sure potatoes are evenly covered. 6. Bake on 400 degrees for 45 minutes 7. Enjoy!
