Avial (Aviyal) is a semi gravy, keto friendly Kerala side dish. This dish have a variety of vegetables, cooked with Coconut and topped with Coconut Oil. Loaded with the goodness, this dish is an unavoidable part of Kerala Onam Sadhya. It is also perfect for serving with meals as well. The major attraction of Avial lies in the cut of the vegetables used. It should not be diced or chopped into small pieces, but it should be sliced lengthwise. There may be slight variations in the recipe depending on the region. Though its traditionally thick dish, the consistency varies at different parts of Kerala. Also the vegetables used can be altered. All these factors makes Aviyal a dear dish of not only Malayalis, but also for all health loving foodies.

Cumin Seeds (ചെറിയ ജീരകം) - ½ Teaspoon
Grated Coconut (തേങ്ങ ചിരണ്ടിയത്) - 1 Cup
Shallots (ചെറിയ ഉള്ളി) - 5 to 10 Nos
Elephant Foot Yam (ചേന)
Raw Plantain (നേന്ത്രക്കായ്)
Yellow Cucumber (വെള്ളരിയ്ക്ക)
Ivy Gourd (കോവയ്ക്ക)
Snake Gourd (പടവലങ്ങ)
Ash Gourd (കുമ്പളങ്ങ)
Carrot (കാരറ്റ്)
Long Beans (പച്ചപ്പയർ)
Pumpkin (മത്തങ്ങ)
Drumstick (മുരിങ്ങക്കായ്)
Green Chilli (പച്ചമുളക്) - 5 Nos
Curry Leaves (കറിവേപ്പില) - 4 Sprigs
Turmeric Powder (മഞ്ഞള്പൊടി) - 1 Teaspoon
Salt (ഉപ്പ്) - 3 Teaspoons
Coconut Oil (വെളിച്ചെണ്ണ) - 4 Tablespoons
Water (വെള്ളം) - 1 Cup (250 ml)

Ingredients:-
Yam-1 1/2 cup
Cucumber-1 1/2 cup
Raw banana-1 1/2 cup
Carrot-1 cup
Turmeric-1/4 tsp
Salt
Coconut-1 1/2 cup

Prepared with a delicious mix of veggies, this classic dish from Kerala is similar has flavours of coconut and yogurt too.
AVIAL
Ingredients
2 medium carrots, cut into 1 inch thick strips
50 grams broad beans (papdi), stringed and cut into 1 inch pieces
100 grams red pumpkin (kadu), peeled and cut into 1 inch thick strips
100 grams white pumpkin (bhopla), peeled and cut into 1 inch thick strips
50 grams French beans, cut into 1 inch pieces
50 grams yam (suran), peeled and cut into 1 inch thick pieces
100 grams raw banana, peeled and cut into 1 inch thick strips
100 grams drum sticks, peeled and cut into 1 inch pieces
50 grams cluster beans (gavar), stringed and cut into 1 inch pieces
Salt to taste
¼ tsp turmeric powder
1 cup whisked yogurt
2 tbsps coconut oil
10-15 curry leaves
Paste
1 cup scraped fresh coconut
2-3 green chillies
1 tsp cumin seeds
Method
1. Heat a non-stick deep pan, add carrot, red pumpkin, white pumpkin, French beans, yam, raw banana, drum sticks, cluster beans, turmeric powder and salt. Add 1 ½ cups water, mix and cover and cook for 10-12 minutes.
2. Put coconut in a blender jar, add green chillies, cumin seeds and ½ cup water and blend to a coarse paste.
3. Add ground paste into the vegetable mixture and mix. Reduce the heat to low and add yogurt and mix. Cook for 1-2 minutes.
4. Add coconut oil and curry leaves and mix and take the pan off the heat. Transfer into serving bowls and serve hot.

Simple and tasty Authentic Kerala Aviyal
Ingredients
Medium sized vegetables cut length wise
Carrot
Beans
Yam
Green Raw Banana
Cucumber
Drumsticks
Green Beans
Ashgourd
Curry leaves
Green Chilies- 4-6
Coconut Oil - 3-4 tbsp
Grated Coconut -3 cups or 2 boxes
Cumin Seeds – ½ tsp
Shallots – 6-8 Nos
Curd – ½ cup (according to sourness)
Red chili powder- ½ tsp
Turmeric powder – ½ tsp + 2 pinch
Water
Salt
Method
Heat a pan and add coconut oil and then add the drained and washed(with turmeric
And salt) vegetables into it. Sauté the vegetables .Add some turmeric and chilly powder and salt. Sauté for 2 mins. Let the vegetables cook in the water that is extracted from itself. Add additional hot water only if necessary. While the vegetables get cooked , crush some small onions , cumin seeds, curry leaves and green chillies. Cumin seeds have to be crushed first. Add the crushed mix to the grated coconut. Add some turmeric and salt and nicely mix everything to the grated coconut. Mix well with either your hands or a spoon. See the vegetables are nicely cooked or not. After it is cooked well add the curd to the vegetables and then slowly mix it.Now slowly add the coconut mix into the vegetables and mix well. On medium flame cook everything for few mins. Check the water content in the pan to avoid a sticky bottom. Add the curry leaves and few drops of coconut oil and close the lid.
