INGREDIENTS:
1 small onion, diced
3 garlic cloves, minced
1/2 a green bell pepper, diced
1 Portuguese sausage, diced
1 tbsp neutral oil
1 lb ground beef
1 tsp salt
1 tsp garlic powder
1 tsp cayenne pepper
1 tbsp chili powder
1 tsp cumin
1 tsp paprika
1 (15 oz) crushed tomatoes
1 (15 oz) tomato sauce
1 (16 oz) red kidney beans
2 tbsp mayonnaise
2 bay leaves
8-10 Redondo dinner franks, cooked
Salt and pepper, as needed
*Add a tsp of sugar if sauce is tart
*You can also use your favorite store bought chili seasoning packet.
Serves 8-10 people

Texas Chili: Brown and drain 3.5 lbs hb meat. Add 1/2 chopped onion, 1/2 chopped green bell pepper, and 1 clove garlic minced. Cook until onions are somewhat clear ~10 mins.
Then add 1.5 TBL chili Powder. Add 1 tsp of each: cumin, crushed red pepper, and ground oregano. Add 28 oz diced tomatoes, and 12 oz tomato paste. Add 1.5 chopped pickled jalapeno peppers. Add 3-4 cups water.
Simmer 1.5 hrs. Add 2 cans beans if desired and cook an additional 30 mins.
How to Make the Best Chili Ever
This hearty, meaty chili will fill up the hungriest of appetites. This recipe makes a big ole batch of chili. This recipes contains 4 lbs of meat! 3 lbs of ground meat and 1 lb of chuck roast or stew meat. I love this recipe with venison instead of beef as well. Any combo of meats works but having plenty of ground meat plus some large chunky meat that will break down and get super tender during a 6-8 hour cook is the best.
If you want to try this recipe with venison, but don't hunt, our friends at Maui Nui Venison sellship amazing Axis deer meat. It's the one of the cleanest tasting game meats and nutrient dense!
This recipe will require a large slow cooker or dutch oven. It has a medium spiciness level. You can adjust that by adding more or less chili seasoning.
