How To make Aussie Meatloaf
1 lb Ground beef - lean
1 lb Sausage stuffing
1 c Breadcrumbs - fine
2 Onions - medium, chopped
Fine 1 tb Curry powder
1/2 c Water
1 tb Parsley - chopped
1 Egg - beaten
1 c Clove - crushed
1/2 c Milk
Salt and pepper to taste
SAUCE:
1 Onion - chopped very fine
1/4 c Water
1/2 c Ketchup
1/4 c Dry red wine OR beef stock
1/4 c Worcestershire sauce -
Lea & Perrins 2 tb Vinegar
1 tb Instant coffee
1/4 c Brown sugar - packed
1 oz Margarine
2 ts Lemon juice
Contributed to the echo by: Fred Towner Barbecue Meatloaf Aussie Style - First Prize LOAF: Combine meats, breadcrumbs, onions, salt, pepper, garlic, parsley, curry and egg in large bowl. Mix well. Mix milk and water and add to meat mixture a little at a time until smooth but firm. Shape into loaf and put into greased baking pan. Bake 30 minutes at 375F. SAUCE: Saute onions in margarine until golden and add all other ingredients. Bring slowly to a boil, lower heat and simmer 10 to 15 minutes. (great with ribs or chicken). After loaf has cooked for 30 minutes, pour half of the sauce over the meat, return to oven and bake 45 minutes more, basting often with remaining sauce. Serve loaf hot in thick slices with remaining sauce. Also makes great sandwiches. Servings: 8

Ingredients:
2 lbs ground beef (90% lean)
1 large white onion (diced)
2 eggs
2 tbsp garlic cloves (minced)
4 tbsp ketchup
1 tbsp Worcestershire sauce
4 tbsp fresh parsley (finely chopped)
3/4 cup panko breadcrumbs
1/2 cup milk
2 tsp Italian seasoning
1/2 tsp smoked paprika
2 tsp salt
1/2 tsp black pepper
Meatloaf Sauce:
1 cup ketchup
2 tsp white vinegar
2 tbsp brown sugar
2 tsp garlic powder
1 1/2 tsp onion powder
1/2 tsp salt ((To taste))
1/2 tsp pepper ((To taste))
Instructions:
1. Preheat oven to 375 F.
2. Spray a loaf plan with nonstick spray and set aside.
3. In a large mixing bowl, combine ground beef, bread crumbs, beaten eggs, onion, ketchup, parsley, milk, Italian seasoning, minced garlic, paprika, salt to taste. Mix until well combined.
4. Place meatloaf mixture into prepared loaf pan layering mozzarella cheese in the middle (optional). Bake at 375 F for 40 minutes.
5. Start preparing the meatloaf sauce. In a small mixing bowl, mix ketchup, brown sugar, garlic powder, and onion powder. Add salt and pepper to taste (kosher salt is ok to use). Mix until ingredients are well combined. Spread the meatloaf with the glaze when it has 10 minutes left to bake.
6. Let the meatloaf rest for 5 minutes. Top with fresh parsley and enjoy!

I’ve never been a fan of meatloaf, not really my thing. But this is a different story!
This Italian Meatloaf Wrapped in Pancetta is a dish that is sure to please any Italian food lover. The Italian meatloaf is made with a mix of beef and pork, some vegetables and a few secret ingredients keeping it juicy and super tasty. It is then wrapped in pancetta and cooked until it is super juicy and crispy on the outside.
This version a little like an arancini whereby it contains a small piece of mozzarella cheese that oozes out from the centre. This recipe is sure to become a family favourite for both meatloaf lovers and otherwise. Perfect for the festive season and to impress your guests!

How to make 1940's Meatloaf | Dining Through The Decades Episode 3 Season 2
Hello Darlings! In this weeks episode we make a classic meal, Meatloaf! This recipe is from 1943 from a WWII Ration Cookbook called Recipes for Today which was published by the General Foods Corporation in the USA.
I LOVED this recipe, the Meatloaf tasted absolutely delicious! Don't forget to let me know if you try it out too!

Family Meat Loaf (1943)
4 cups Post's Corn Toasties, or 3 cups Grape-Nuts Flakes or Post's 40% Bran Flakes ( I used 2 cups of breadcrumbs and 1 cup of Shredded Wheat cereal)
2 pounds ground meat
1 egg
2 teaspoons salt
3/4 cup chopped celery
1 tablespoon minced onion
1/2 teaspoon sage
1/4 cup chopped celery leaves
1 tablespoon chopped parsley
1/4 teaspoon pepper
1/4 cup ketchup
1 cup milk or stock
Glaze
1/4 cup packed brown sugar
1/4 cup ketchup
1 tablespoon prepared mustard
Method
Crush cereal flakes slightly.
Combine remaining ingredients in order given; mix well. Add flakes.
Mix glaze in seperate bowl, stir to combine.
Pack into greased 9x5x3-inch loaf pan. Pour glaze over the top of loaf.
Bake in moderate oven (375 F/ 190C) for 1 hour and 15 minutes.
Makes 8 to 10 servings.
( I made some additional glaze to pour over the finished meatloaf and that made it SO delicious, I highly recommend it!)
