Easy Spinach Artichoke Quiche

Dough
3 cups Glicks White Flour
3/4 teaspoon salt
3/4 cup cold canola oil
4-6 tablespoons cold water
Filling
1/2 white onion, finely diced
3 cups frozen spinach, defrosted and squeezed to release as much water as possible
8 Frozen artichokes, defrosted, trimmed and chopped into 1/8-inch slices
4 eggs, lightly beaten
3/4 cup heavy cream
1 cup shredded mozzarella
2 tablespoons Parmesan cheese (optional)
2 teaspoons salt
1 teaspoon black pepper

Artichokes Quiche with Roasted Peppers
Want to add artichoke to your repertoire of quiches? It's a snap with this simple but tasty artichoke quiche with roasted red peppers recipe. This takes about 30 minutes to bake and is the perfect dish for brunch, special occasions, or even a quick dinner.

Makes one 9-inch quiche
Quiche crust / Pâte Brisée
▢1 ½ cup (190 g) All-purpose flour
▢½ teaspoon Salt
▢4 oz (113 g) Unsalted butter (chilled and cut into cubes)
▢1 large Egg yolk
▢2 tablespoon Water
Quiche filling
▢8 - 10 Artichoke hearts (fresh, frozen, or canned - sliced )
▢2 large Red peppers (roasted)
▢2 tablespoon Olive oil
▢2 large Sauteed onions (optional )
▢½ cup (60 g) Ricotta cheese
▢½ small Garlic (finely minced)
▢½ cup Italian seasoning (or finely chopped fresh parsley)
▢½ cup (60 g) Cheddar cheese
▢½ cup (120 g) Gruyere or Gouda cheese
Custard
▢3 large Eggs
▢2 tablespoon All-purpose flour
▢½ cup (60 g) Ricotta cheese
▢½ cup (120 ml) Heavy cream (or half/half)
▢½ cup (120 ml) Whole milk
▢¼ teaspoon Kosher salt
▢¼ teaspoon Black pepper
Preheat the oven to 400°F/ 200°C/ Gas Mark 6
Reduce the oven temperature to 375°F/190°C/Gas Mark 5
Bake quiche for 35 to 45 minutes

Easy Crustless Spinach Quiche
This Crustless Spinach Quiche is easy to make and full of delicious flavor! You'll love the combination of spinach, sweet onion, mushrooms, and cheddar and feta cheeses.

✅Ingredients
• 1 tablespoon extra virgin olive oil
• 1 small sweet onion, diced
• 4 ounces mushrooms, sliced
• 2 cloves minced garlic
• 10 ounces chopped frozen spinach, thawed and drained
• 6 ounces crumbled feta cheese
• 8 ounces shredded cheddar cheese
• 5 large eggs
• ½ cup milk
• ¼ teaspoon salt
• ¼ teaspoon black pepper
✅Instructions
1️⃣ Preheat oven to 350 degrees Fahrenheit and lightly grease a 9 inch deep dish pie plate.
2️⃣ Heat olive oil in a large skillet over medium high heat. Add in onion and mushroom and saute until softened, about 5 to 7 minutes. Add in garlic and cook 1 minute more. Stir in spinach, feta, and cheddar cheese. Spoon mixture into the prepared pie plate.
3️⃣ In a mixing bowl, whisk together eggs, milk, salt, and pepper. Pour egg mixture over the spinach mixture in the prepared pie plate.
4️⃣ Bake in the preheated oven for 40 to 45 minutes, until eggs are set. Let cool 10 minutes before slicing and serving.

Spinach, Cheese, Artichoke Quiche
In this video I will show you how to make quiche! The crust is SUPER delicious! It's buttery with a shortbread-like texture. I also made two types of filling (although very similar): spinach, cheese, and artichoke & spinach, cheese, and mushroom. Both are equally yummy! You can substitute and customize the filling to whatever you like- bacon, ham, broccoli, etc.
~~RECIPE~~
****Please note that the measurements change depending on the type of mold you're using. I typed out 2 different recipes here depending on the mold****
~Mini quiche using mini cupcake pan (yields 30)
Pastry crust:
- 2 1/2 cups flour
- 2 sticks (1 cup) butter
- 1/2 tsp. salt
- 7 Tbsp. cold water
- 1 Tbsp apple cider vinegar
Spinach & artichoke filling:
- 3 cloves garlic
- 1/4 cup of diced onion
- 2.5 oz. (1/4 box) of chopped spinach
- 3 artichoke hearts diced
- salt and pepper to taste
Egg filling:
- 2 eggs
- 3/4 cup milk
- 1/4 tsp. nutmeg
Cheese:
- 1/4 cup mozzarella cheese
- 1/4 cup swiss cheese
Bake at 325°F for about 35 minutes. Crust will be a pale golden brown & filling will be set.
~3 inch. tart molds (yields 12)
