✅Ingredients
• 1 tablespoon extra virgin olive oil
• 1 small sweet onion, diced
• 4 ounces mushrooms, sliced
• 2 cloves minced garlic
• 10 ounces chopped frozen spinach, thawed and drained
• 6 ounces crumbled feta cheese
• 8 ounces shredded cheddar cheese
• 5 large eggs
• ½ cup milk
• ¼ teaspoon salt
• ¼ teaspoon black pepper
✅Instructions
1️⃣ Preheat oven to 350 degrees Fahrenheit and lightly grease a 9 inch deep dish pie plate.
2️⃣ Heat olive oil in a large skillet over medium high heat. Add in onion and mushroom and saute until softened, about 5 to 7 minutes. Add in garlic and cook 1 minute more. Stir in spinach, feta, and cheddar cheese. Spoon mixture into the prepared pie plate.
3️⃣ In a mixing bowl, whisk together eggs, milk, salt, and pepper. Pour egg mixture over the spinach mixture in the prepared pie plate.
4️⃣ Bake in the preheated oven for 40 to 45 minutes, until eggs are set. Let cool 10 minutes before slicing and serving.

Spinach Artichoke Crustless Quiche | Low-Carb, Keto
This Spinach Artichoke Crustless Quiche recipe makes a wonderful Easter brunch dish or Mother's Day breakfast to serve to your loved ones. It is a healthy, keto, low-carb, gluten-free, and can easily be made vegetarian breakfast casserole recipe the whole family will love!
RECIPE:
INGREDIENTS:
1 Tbsp. olive oil
½ sweet onion, finely diced
2 cloves garlic, crushed
4 cups spinach, finely chopped
¾ cup artichokes hearts, coarsely chopped
6 eggs, large
½ cup almond milk, cashew or soy milk
1 tsp salt
¼ tsp. pepper
½ cup Mozzarella cheese
¼ cup Parmesan cheese
INSTRUCTIONS:
Preheat oven to 375 degrees.
Sauté olive oil and onion in a medium-sized skillet over medium heat for 4-5 minutes.
Add crushed garlic and continue sautéing for 1-2 minutes.
Mix in chopped spinach and sauté for 2-3 minutes, or until spinach has wilted.
In a large bowl whisk together eggs, milk, salt, and pepper.
Evenly spread sautéed spinach and chopped artichokes in a 9-inch round quiche or pie dish that has been sprayed liberally with non-stick cooking spray.
Pour in egg mixture and sprinkle both cheeses on top.
Bake for 27-30 minutes, or until the top turns golden brown.*
Let quiche sit for 5-10 minutes before serving and enjoy!
RECIPE NOTES:
If you are baking the quiche in a smaller 8-inch pan you may need to increase the bake time to 30-35 minutes. If baking the quiche in a larger 10-inch dish, it may be ready in 25-27 minutes.

CRUSTLESS QUICHE RECIPE
2.5 – 3 cups broccoli florets (8 ounces)
2.5 – 3 cups cauliflower florets (8 ounces)
1/2 tsp sea salt
1/2 tsp garlic powder
1/4 tsp black pepper
6 eggs
6 egg whites (1.25 cups)
1/2 cup 2% Greek yogurt
1/4 cup scallions chopped
1 cup shredded cheddar cheese
Preheat oven to 350 F and grease a 9-inch pie plate with cooking spray, butter, or coconut oil. Set aside. Bring a couple inches of water in a small-medium-sized pot and bring to a boil. Place a steamer basket in the pot and add the broccoli and cauliflower florets and steam for six minutes or until tender but not mushy.
Transfer the chopped broccoli and cauliflower to a medium bowl and season with salt, garlic powder, and black pepper. Gently toss so the veggies are coated with the spices.
Combine the eggs, egg whites, and Greek yogurt in a separate large bowl and whisk until well combined.
Add the seasoned vegetables to the prepared pie plate. Sprinkle the scallions and shredded cheese over top. Pour the egg mixture over the cheese making sure all the veggies and cheese are covered with the egg mixture.
Cook for 45 minutes or until set and the top is lightly browned. Cool, slice, and enjoy!

It doesn't get much easier or quicker than making a homemade quiche! This is my favorite flavor but you can see how easy it is to change up into any flavor combination you'd like! I start with a pate Brisee crust because it's not a sweet crust so it's perfect for savory dishes!
BACON SPINACH ARTICHOKE QUICHE
Pate Brisee
1 C all-purpose flour
5 Tbsp cold butter cubed
1 Tbsp shortening
1/2 tsp salt
1 1/2 tsp white vinegar
6 Tbsp ice water
In a food processor combine the flour, butter shortening and salt and process to a coarse meal texture.
Add the vinegar and water and process again, the dough will moisten and pull together
Pat into a disk shape and wrap in plastic wrap, refrigerate for 15-30 mins
Roll out the pastry dough and place/pat into a 10 inch tart pan, prick the bottom, cover with plastic wrap and refrigerate another 15-30 mins
Quiche
6 lrg eggs
1/2 C whole milk
7 oz artichoke hearts drained and chopped
8 oz fresh spinach chopped
1/4 C onion chopped
3 cloves garlic pressed/chopped finely
2/3 C grated mozzarella
1/3 C grated parmesean
1/2 tsp salt
1/2 tsp pepper
1/3 C Chopped bacon (I used freshly cooked but you can use bacon bits if you prefer)
Preheat the oven to 350° F
Beat the eggs and milk together
Add everything else and stir until the mixture is evenly mixed
Pour into the pastry crust and spread out
Bake for 35-40 mins until the crust is golden and the quiche is set
