Fasolakia: Greek Green Bean Casserole for Thanksgiving!
Download the Thanksgiving Ebook here:
The Greek version of a green bean casserole is like a breath of fresh air. It’s braised in a hearty tomato sauce until the green beans and potatoes are nice and tender. I love to serve this with a great big slice of feta cheese. We eat it throughout the year but, it would be a wonderful side for your Thanksgiving table.
Here you have another delicious example of how healthy food can taste great too! The Greeks really figured out how to put the spotlight back on veggies and make them the star of the dining table ???? All you need with this recipe is a nice crusty piece of toasted bread to soak up the yummy tomato sauce and a slice of creamy feta cheese and you’re good to go.
Nutritious and delicious, this braised green bean recipe can be made as a side or as a healthy main course.

Green Bean Casserole
FRESH, FROZEN, OR CANNED GREEN BEANS WORK
So if you're more into using frozen, do it! Frozen green beans have been preserved at their peak, so they taste very comparable to fresh. You can blanch frozen or fresh ones to get them tender. If you're using canned green beans, it's not our first choice, but no need to blanch them :)
SAUTÉ ONIONS & SHROOMS
By sautéing mushrooms (you can choose whichever variety you like most!) with thinly sliced onion in butter, you're building a base with some serious depth of flavour. Cook the mushrooms enough that they get a little caramelised and you'll really be good to go.
MAKE YOUR OWN CREAM SAUCE
This sounds fancy, but it's seriously melting butter, whisking in a little flour, and pouring over milk. DONE. Let that mixture simmer—and thicken—on your stovetop and that's the creamy element of green bean casserole you know and love, only no gloppy texture allowed.
ADD CHEESE—OR DON'T.
Although not classic, some recipes call for mixing grated cheddar into the green bean mixture. As cheese lovers, we can totally get behind this, though we don't include in the recipe below. Gruyere, Parmesan, or Monterey jack would all work.
NEVER SKIP THE FRIED ONIONS
They're salty, crunchy—and absolutely mandatory.
YIELDS:6
PREP TIME:10 mins
TOTAL TIME:55 mins
Ingredients
450 g green beans, trimmed
6 tbsp. butter
1 onion, sliced into half moons
225 g sliced mushrooms
Salt
Freshly ground black pepper
2 cloves garlic, crushed
30 g plain flour
720 ml milk
120 g fried onions
Directions
Step 1
Preheat oven to 180°C (160ºC fan). Prepare an ice bath: In a large pot of boiling water, add green beans and cook until bright green, about 6 minutes. With a slotted spoon or tongs, quickly transfer green beans to ice bath to cool, then drain and transfer to a large bowl.
Step 2
In a large ovenproof pan over medium heat, melt 2 tablespoons butter. Add onion and cook, stirring occasionally, until tender, about 5 minutes. Add mushrooms and season with salt and pepper. Cook, stirring often, until mushrooms are golden, about 5 minutes more. Stir in garlic and cook until fragrant, 1 minute, then transfer mixture to green bean bowl.
Step 3
In same pan over medium heat, melt remaining 4 tablespoons butter. Whisk in flour and cook until golden, about 2 minutes. Gradually whisk in milk and season with salt and pepper. Bring to a simmer and cook until thickened, about 4 minutes. Remove from heat, then add green bean mixture and toss until even combined.
Step 4
Bake until warmed through and bubbling, about 30 minutes.
Step 5
Top with fried onions and bake 5 minutes more.
