Apricot and Coconut Bliss Ball Recipe
Delicious, nutritious and super easy to make! These make a great workday week snack!
Makes roughly 17 (medium to large) Ingredients: 160g Apricots 65g Desiccated coconut + some for coating the balls at the end 40g Whole almonds 20g Protein powder (I used whey in this recipe) - optional 2 Tablespoons maple syrup 4 Tablespoons coconut oil
Instructions: 1. Soak your dried apricots in enough water to cover them for at least an hour then drain of excess water 2. Melt your coconut oil 3. Place whole almonds in a food processor and pulse until coarsely chopped 4. Add apricots to almonds, pulse until combined 5. Add the remaining ingredients, distributing casually evenly 6. Process everything together, stopping on a few occasions to scrape down the sides, ensuring all ingredients are combined into the mixture 7. Once everything has come together take a small amount of mixture, forming into a ball in the palms of your hand – note it works better if your hands are slightly wet as it stops the mixture sticking! 8. Cover the balls in desiccated or shredded coconut or melt dark chocolate and cover…or you know, both ;-) 9. Chill in fridge for 2+ hours 10. Face Feed at leisure ;-)
