How To make California Fig Coconut Balls
3/4 c California dried figs
3/4 c Shredded coconut
1/2 c Nut meats
1 ts Grated lemon rind
1 ts Lemon juice
Steam figs. With scissors, clip off stems, and grind or chop fine. Grind coconut and nut meats, then combine all ingredients and work to a paste. Add more lemon juice if necessary. Shape mixture into little balls about 3/4 inch in diameter, and roll in finely chopped coconut.

While you can try to prepare some paleo energy balls without dates, it all comes down to you to make the right pick and prepare them the way you want.

Healthy easy snacks - Energy balls with dates and coconut (gluten and lactose free)
Energy balls is a healthy, gluten and lactose-free snack that is really simple and quick to prepare. It is based on dates which are very nutritional, high in disease-fighting antioxidants and minerals and, can help regulate blood sugar too. This snack can give some extra kick before a workout and also matches vegan standards :)
Although dates are amazing, they are also high in calories, so don't eat too many of them a day!
Ingredients - Balls
~10 dates (~80 gr)
Half cup Cashews (~55 gr)
Half cup Shredded coconut (~45 gr)
1 tbsp Coconut oil
1 tbsp Water
Ingredients - Chocolate shell
100gr Very dark chocolate
2 tsp Coconut oil
Preparation:
1) Soak the cashews for 2-3 hours (this will reduce phytic acid found in cashews and will help to make the balls creamier)
2) Blend the cashews first for 10-20 seconds
3) Add the dates, coconut oil, water and, a quarter cup of the shredded coconut
4) Blend everything until you get the desired consistency (optionally you can add a little bit of extra water)
5) Form some balls (or other shapes) and let them rest in the fridge for approx. 30 mins
6) While the balls are cooling, fill a pot with some water and heat it up
7) Break the chocolate into smaller pieces and put in a glass or ceramic bowl
8) Add some coconut oil and place the bowl into the pot and let it float on top
9) Occasionally stir and let the chocolate melt
10) When the balls are cool enough, put them into the chocolate, twist them to be covered in chocolate and quickly put them on a baking paper
11) While the chocolate is still soft, sprinkle the balls with the rest of the shredded coconut
12) Let it cool again, so the chocolate shell can harden
13) Enjoy :)

Bolinhas de energia com tâmaras e coco (sem glúten ou lactose).
Preparamos um delicioso doce feito com tâmaras e coco. O preparo é fácil e com poucos ingredientes :)
Doce de tâmaras: 1/2 xic de castanha de caju (deixados de molho por 2-3 horas antes do preparo), 10 tâmaras sem semente, 1/2 xic de côco ralado, 1 colher de sopa de óleo de coco, 1 colher de sopa de água.
Cobertura de chocolate: uma barra de chocolate (90% cacau) e 2 colheres de chá de óleo de coco.
No final do preparo, coloque-os na geladeira por pelo menos 30 min antes de servir.
