How To make Apricot Brandy Bread
1 c Dried apricots; chopped
1 ts Baking soda
1/4 c Apricot brandy; plus:
1 tb Apricot brandy
1/4 ts Salt
1/2 c Shortening
1 ts Cinnamon
1 c Sugar
1/2 ts Nutmeg
1/4 ts Allspice
2 c Flour
1/4 ts Cloves
1 c Pecans; chopped
1 c Applesauce
1 Egg
Combine apricots & brandy; cover and refrigerate overnight. Cream shortening; gradually add sugar and beating well. Add egg, and mix well. Combine one cup flour with baking soda, spices, and salt; set aside. Add pecans to apricot mixture; combine with reserved flour mixture. Toss well to coat all pieces with flour; set aside. Add remaining one cup flour to shortening/sugar mixture alternating with applesauce, (beginning and ending with flour mixture). Stir in reserved apricot mixture. Pour into a greased 9 x 5 x 3 loafpan; bake at 350 deg. for 1 hour and 15 min. or until
toothpick inserted in center comes out clean. Cool loaf in pan for 10 loaf. Notes: May be frozen up to 3 months. This is more of a sweet cake than a bread. May be wrapped in cheese- cloth and soaked with additional brandy and stored in a tin, if desired. Judy Garnett -----

Ingredients:
1 cup mixed glazed fruits, chopped
½ cup dried apricots, chopped
½ cup dried cranberries
½ cup dark raisins
½ cup candied orange peel
1 cup walnuts, coarsely chopped
½ cup golden raisins
1 cup pecans
1 cup pitted dates
½ cup green candied cherries
½ cup red candied cherries
¾ cup rhum
1 ½ cup all purpose flour
1 tsp cinnamon
½ tsp allspice
½ tsp nutmeg
½ tsp baking soda
½ tsp salt
½ cup (113g) softened butter, unsalted
1 cup packed brown sugar
3 eggs, medium
⅓ cup molasses
2 tablespoons rhum
*Divide evenly into three 6x3x2.5 loaf pans greased and lined
*Bake in a preheated oven at 165C for 1 hr 30 mins or until toothpick inserted at the center comes out clean (you can opt to bake them using baine marie method for even cooking and prevent the cake from drying out or just bake them longer at lower temperature)
*Cool completely and brush all over with rhum or brandy
*Wrap them individually in aluminum foil and refrigerate. Avoid touching with bare hands to prevent spoilage
*Brush them again with rhum after a week then repeat brushing for four weeks
*To make a chocolate fruit cake, replace 1/2 cup of flour with alkalized unsweetened cocoa powder

Decadent and EASY Bread Pudding Recipe
This amazing bread pudding recipe is perfectly sweet with a wonderfully soft texture inside, a crisp top, and a delicious traditional pudding sauce. Bread pudding is basically a giant upgraded french toast casserole. Super-quick to whip up and of course it's a great use for stale bread, but just because it's easy as can be doesn't mean it's not amazingly delicious! I used brioche instead of plain white bread then whipped up my favorite brandy sauce, which I poured liberally on top.

One Hundred Year Old Great Grandma's Apricot Brandy Pound Cake Recipe
It’s absolutely NOT Christmas at our house without this Apricot Brandy Pound Cake on the Dessert Buffet. This recipe has been passed down from generation to generation and is still as delicious as I’m certain the very first cake every made. I remember my Grandmother baking it and then my Aunt and then me. I was finally trusted to bake the cherished family favorite. Ive been baking this Apricot Brandy Pound Cake for over 25 years. My family looks forward to each and every Christmas. I hope you’ll give it a try and make it part of your Christmas Dessert Celebration. Enjoy
Apricot Brandy Pound Cake
Combine
2 sticks soft butter and 3 c sugar. Mix well.
Add 6 eggs one at a time
Dry Ingredients:
3 c flour
1/4 t baking soda
1/2 t salt
Mix together well.
Wet ingredients:
1 c sour cream
1/2 t rum flavoring
1 t orange extract
1/4 t almond extract
1/2 t lemon extract
1 t vanilla
1/2 c Apricot Brandy
Add dry ingredients and wet ingredients to sugar and butter alternately.
Mix till just combined.
Pour into greased and very well floured bundt pan.
Bake 325 for 60 to 70 min. till toothpick comes out clean
Cool in pan for 30 min. Then gently shake sides and tip over carefully onto cooling rack.
Wrap well for the big day.
