The steak accordion (I did something bad)
The steak accordion (I did something bad)
Maximizing the crust on a steak is always a priority. The most effective method I’ve found is to dry brine. Salt the steak several hours or ideally a day before cooking and place on a rack in the fridge - the salt will fully absorb leaving the exterior completely dry. With less moisture on the surface of the steak, the crust becomes stronger and more flavorful.
Another way to maximize the crust is to increase the surface area. It’s the same reason why I strongly prefer regular French fries to thick potato wedges. Fries have more surface area per volume, leading to more crunch and seasoning per bite.
This is what I was going for in this video. The surface area of the steak exposed to the grill is significantly higher, which means more seasoning and crust per bite. There is however a major drawback.
The accordion shape leads to a steak that has become “thinner” and thus cooks faster. This means less time on the grill. So despite the greater surface area, it has less time for the crust to develop. I found that dry brining and an extremely hot grill will help. Whether you consider it to be practical or not, it’s definitely a fun process to try!

Well, I’ve got a treat for you. What we’ve got is Michigan tart cherry smoked pie. I’m excited about this, man! Here’s what we’ve got for ingredients. We’ve got cinnamon, we’ve got ginger, corn starch, and, naturally, Pioneer Sugar, which is one of our partners. This is the sugar right here. We’ve got out homemade dough, our cutting board, and we’re ready to rock, man.
Our good friend Brad at Nature Blessed provides the best cherries you’re ever going to have. We’re going to strain these through a colander. Put the cherries in here. I just press them down, get all the juice out of them. These cherries are absolutely awesome. They’re available at many, many stores, but you can go on the website and see where you can get them. Get that juice out of there. We’re going to drink this juice. We love Pioneer Sugar. For anything that you do that requires sugar, this is the way to go. I like to put a full cup of sugar in my cherry pie, because these are very tart cherries.
We’ve got 2 tablespoons, heaping, of cornstarch. Now add cinnamon, about half a teaspoon. Ginger, the same, about half a teaspoon. You can measure if you want to, I’ve done it enough times that I can get an eyeball on this. Now get the filling all blended in good. I’ve been waiting for Guy to get here, so this dough is starting to get stiff, but that’s OK. You don’t want to roll it real hard or tight. Now look what we’ve got here, the Rada Pie Stone. See these little cracks in the dough? That’s fine. It keeps the filling from bubbling up from the bottom. We’ll also make some holes with a fork. You don’t want the pie to bubble up and explode.
Now we have 1 farm fresh egg. Mix the egg with a whisk or a fork. Now get your brush and brush all the edges before putting another part of your crust on here. We’re going to do lattice strips on this thing. You want to get egg wash all over the crust. Set this aside for a second. Get this piece of dough and roll it just a little more. Now we have a Rada Pizza Cutter, and that’s how we’re going to make our lattice. You’ll want to make them a half inch.
Again, you want to make sure everything has egg, because you want it to be glued. We’ve got flour on these, we use real flour. We grind our own flour. Try to get about a half inch on the pie.
Now we’re going to use a Rada knife to cut our lattice off. The knife is so sharp it will slice molecules. All you have to do is put a little pressure on there and just push down and you’re cutting. A sharp knife is so, so important to us, the way we do things. Now we’ve got to do a little more egg wash. It is very important that you use egg wash on these pies. Again, Pioneer Sugar. No certain amount, just make sure you cover everything.
We’ve got the smoker already cranking. Let’s take it out and put it on the smoker. You see that? It’s not only smoked, it’s apple-smoked Michigan tart cherry pie. We can put that on there, go away, and come back in 1 hour and it’ll be perfect.
You have not had anything this awesome. We’re using the Rada Pie Server to cut across like this. Rada actually has serrated edges on their Pie Server so it actually cuts pie. Ladies and gentleman, Michigan tart and cherry smoked in apple wood. No pie is complete without ice cream. In an upcoming video, we’ll show you how to make homemade tart cherry ice cream. Get a little warm water on this. Everything were using is Rada equipment. There’s nothing stronger than the Rada Ice Cream Scoop.
Lord, thank you for everything you provide for us to work with here. The flour, the cherries, everything. Man, this ice cream turned out better than last time. Hope you guys enjoyed that segment! Keep watching all of our videos, everything we’re involved in, because this is how we live. This is the Team Fitzgerald lifestyle.

Down to earth veganism with Paul & Jason. We're a married couple from Manchester who love to share our passion for vegan living with recipes, reviews, chats, fitness, fun and the odd appearance of our cat Isis.
Although we started this channel in 2015 it wasn't really until late 2017 that we started to work hard at it, due to things outside of our control. Now, in 2019, this channel has our full attention and we have splashed out on the right equipment and software to enable us to make great content.
We'd love a like and a subscribe, of course.
Thanks so much for taking a look.
