The Giant Version of a Classic Childhood Snack: Ding Dong Cake
This ding dong cake is like a giant version of the sweet snack cake! It's made with rich chocolate cake layered with a creamy filling and a chocolate ganache topping.
Recipe:
Ingredients
Filling Base
1 cup granulated sugar (200g)
5 Tablespoons all-purpose flour (40g)
¼ teaspoon salt
1 cup whole milk (236ml)
Cake
1 ¾ cups all-purpose flour (205g)
1 cup brown sugar, firmly packed (200g)
1 cup granulated sugar (200g)
¾ cup natural cocoa powder (75g)
1 ½ teaspoons baking soda
¾ teaspoon salt
½ cup unsalted butter, melted (113g)
½ cup neutral cooking oil (118ml) (canola, vegetable, or avocado oil)
2 large eggs + 1 egg yolk, room temperature preferred
2 teaspoons vanilla extract
1 cup buttermilk, room temperature preferred (236ml)
½ cup hot coffee (118ml)
Filling
1 filling base (from above)
1 cup unsalted butter, softened (226g)
1 teaspoon clear vanilla extract (see note)
Ganache frosting
8 oz semi-sweet chocolate (226g)
1 cup heavy whipping cream (236ml)

Notes
Vanilla extract
I like to use clear vanilla in the filling because it keeps the filling pure white. It also lends itself to a slightly more authentic ding-dong flavor (which I suppose is artificial). You can absolutely substitute classic, real vanilla extract instead.
Storing
Store in an airtight container in the refrigerator for up to 5 days. The filling is soft, if left in a warm environment for too long it could start to melt and the layers could slide.

Frosted Banana Bars
1/2 cup butter (1 stick), softened
1 1/2 cups sugar
2 large eggs, room temperature
1 cup sour cream
1 teaspoon vanilla (or banana flavoring)
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
2 ripe bananas, mashed (about 1 cup)
FROSTING:
1 package (8 ounces) cream cheese, softened
1/2 cup butter, softened
2 teaspoons vanilla (or 1 teaspoon banana flavoring)
4 cups confectioners’ sugar
Preheat your oven to 350°. Spray a 15” x 10” x 1” baking pan with nonstick spray.
In a large, mixing bowl, cream together the butter and sugar for approximately two minutes. Add the eggs, sour cream, and vanilla (or banana) flavoring. Whisk together the flour, baking soda, and salt; mix into the wet ingredients. Stir in the mashed bananas. Spread the batter into your prepared baking pan and bake for 18 to 22 minutes or just until the center is done.
Once your cake has cooled completely, make your frosting by creaming together the cream cheese and butter for two minutes. Add your choice of flavoring. Gradually add the confectioners’ sugar, beating until the frosting is of spreading consistency. Spread the frosting on your cake.

For batter:
Sugar 2 cups
Flour 1 3/4 cups
Cocoa 3/4 cup
Baking Soda 1 1/2 tsp
Baking Powder 1 1/2 tsp
Salt 1 tsp
2 eggs
Milk 1 cup
Oil 1/2 cup
Vanilla Extract 2 tsp
Boiling Water 1 cup
For icing:
Butter 1 cup
Cocoa 1 1/2 cup
Powdered Sugar 2 cups
Milk 2/3 cup
Vanilla Extract 1 tsp
STEP-BY-STEP INSTRUCTIONS:
Preheat oven to 360F / 180C. Grase and flour two 9-in baking pans. Set aside.
In the large bowl of a standing mixer, stir together flour, sugar, cocoa, baking soda, baking powder and salt.
Add eggs, milk, vegetable oil and vanilla extract. Beat until smooth about 3 minutes.
Stir in boiling water. You can use rubber spatula to stir. Batter will be very runny.
Pour batter evenly between the two pans and bake on middle rack of oven for about 30-35 minutes, until toothpick inserted in centre comes out clean with just a few moist crumbs attached.
Let it cool about 10 minutes before removing from pans. Than cool completely.
In the meantime, prepare a chocolate buttercream frosting. Use a standing mixer to beat the butter until fluffy.
Finely add in cocoa, powdered sugar, milk and vanilla extract. Mix until smooth.
Cut each cake horizontally.
Smear evenly 2-3 heaped tbsp buttercream frosting over the first layer of cake, cover with second layer and buttercream frosting and continue that process with remaining layers of cake and buttercream frosting. Spread buttercream frosting evenly with a spatula all over the cake.

PRO TIP
You can also line baking pans with parchment paper circles.
It's good idea to substitute water for 1 cup of hot coffee!
