I also love adding them to my meal prep because then I can make them ahead and have them ready for a busy morning or I can pop them into lunch boxes as a kid-friendly afternoon snack.

BAKED APPLE OATMEAL CUPS RECIPE
3 cups old-fashioned rolled oats
1 teaspoon baking powder
1/2 teaspoon cinnamon
1 cup organic buttermilk (you can sub any milk you prefer)
2 eggs, beaten
1/2 cup applesauce (I used cinnamon applesauce)
1 large apple, chopped (1 heaping cup)
1/4 cup raisins
Preheat oven to 350ºF. Spray a 12-count muffin pan with non-stick cooking spray or coat with coconut oil and set aside.
In a large bowl combine oats, baking powder, cinnamon, buttermilk, eggs, and applesauce. Mix together until everything is well incorporated.
Add in chopped apple and raisins and gently toss until they are evenly distributed throughout the batter.
Divide batter amongst all 12 muffin cups and pop in the oven for 25-30 minutes or until they have set through and are golden brown on top.
Cool and enjoy.
*I like to store these in an airtight container and keep them in the fridge. They will last a good week stored this way.

The sweetness comes from the natural sugars in the raisins and apple. So, it's just a little sweet. However, if you prefer a sweeter taste, you can always add a sweetener of your choice,
Ingredients:
230 g rolled oats(2 1/2 cups)
7 g baking powder(1/2 tablespoon)
1/2 teaspoon cinnamon
2 medium apples
3 eggs
1 teaspoon vanilla extract
40 g dried cranberries (optional) 1/4 cup
a pinch of salt
26 x 10 cm/ 10 x 4 inches baking form
bake 35-40 minutes at 180°C/360°F

Hello Everyone.
Are you ready for fall? I sure am. To get in the mood I thought I’d share my Oatmeal Applesauce Cake recipe. It has cozy comforting fall flavors and is great with a cup of tea or coffee. Towards the end of the video I’m painting a watercolor. I always find that watching someone paint can be so relaxing. So I thought I would share. I hope you enjoy this video and thanks for watching.

Oatmeal Applesauce Cake
Cake:
1/2 cup butter softened
1 cup brown sugar
2 eggs room temperature
1 teaspoon vanilla
1 ¼ cup applesauce
1 cup old fashioned oats
1 teaspoon baking soda
1 teaspoon cinnamon
¼ teaspoon nutmeg
¼ teaspoon salt
1 ½ cups all purpose flour
Frosting:
¼ cup butter softened
4 oz cream cheese room temperature
2 tablespoon pure maple syrup
1 ½ cup confectioners sugar
Cake
Preheat the oven to 350 degrees. Grease an 8x8 pan. In a bowl mix until smooth butter, brown sugar, eggs, and vanilla. Add the applesauce, oats, baking soda, cinnamon, nutmeg and salt. Mix again until combined. Mix in the flour until incorporated. Do not over mix. Pour into the pan and bake for 25 to 30 minutes. Or until the toothpick comes out mostly clean. Let cool.
Frosting
With a mixer blend until smooth butter, cream cheese, maple syrup and confectioners sugar. Spread onto cooled cake and enjoy.

Ingredients and recipe:
Add 1 cup quick oats to a bowl
Pour in 1cup milk
Mix them together well
Chop 1 apple
Slice the halves
Dice them
Add to the bowl
Add in 1/4tsp ground cinnamon
Mix well
Blend the mix with a hand blender
Medium heat
Melt unsalted butter
Scoop some of the batter in the pan
Fry for 2 minutes
Flip over and fry for 2 minutes
Done!
Repeat

2/3 Cup Applesauce
1/4 Cup of milk
1 Whole egg
2 Tbsp Melted coconut oil
2 Tbsp Honey
1/2 Tsp Vanilla extract
1/2 Cup of all purpose flour
1 Cup old-fashioned oatmeal
