Apple Spice Cake Cupcakes From Scratch: An Easy And Delicious Recipe, Caramel drizzle
Applesauce Cake cupcakes | Apple Spice Cake from Scratch recipe. My Applesauce cupcake - aka Apple Spice Cake -- is rich in spices and flavor. Along with the Brown Sugar Icing - aka Boiled Icing -- these are perfect. Double the recipes for a three-layer tall cake. Both are 100 years old debuting at the beginning of last century.

Cupcakes
Ingredients:
1/2 c (113 g) unsalted butter
1 c (200 g) sugar
1 egg
1 1/3 c applesauce
1 c raisins or dried figs
2 c (300 g) cake flour
1 tso Cloves
1 tsp Cinnamon
1/2 tsp Nutmeg
1/2 tsp Allspice
1/2 tso kosher salt
1 tso baking soda
1/2 tsp baking powder
Directions:
1. Preheat oven to 350 F. Line cupcake pans with paper.
2. Sift together all dry ingredients: Cake flour, cloves, cinnamon, nutmeg, allapice, kosher salt, baking soda and baking powder.
3. Cream butter and sugar for 5 minutes in a mixer until light and fluffy. Combine in the egg.
4. Alternate in the wet and dry ingredients. Then fold in the figgs or raisins.
5. Pour into the cupcake liners to 2/3 -3/4 full depending if you want the dome on top.
6. Bake for 2-25 minutes or until a toothpick comes out clean.
Boiled Icing:
Ingredients:
2 1/2 c (320 g) brown sugar
3/4 c water
1 tsp vanilla extract
3 egg whites
1. Whisk egg whites to stiff peaks. At the same time in a heavy-bottom saucepan, bring the brown sugar and water to 236-240 f.
2. While the mixer is on high speed, carefully drizzle in the sugar syrup. Continue to whisk on high until stiff peaks, which takes about 10 minutes.
3. Add in vanilla extract.

Hello! Long time no see! How've ya been? I've been baking tiny treats for two these past few months rather than baking full batches of cakes and things. I have no self control, and if there's a whole cake in the house, I will eat it all. So will Mr. Wing-It! So I hope you'll enjoy the next few videos featuring tiny batches of treats for two.
These cupcakes are a weekly staple here. They are a bit coconutty, a bit applesaucy and a bit almondy. They don't have any frosting so they are sort of like tiny coffee cakes. Most of the ingredients are measured by weight (even the liquids!) and I've switched to the metric system because grams are more accurate for these tiny batches. The tiny amounts like salt, baking soda, etc are measured with measuring spoons because it would be tough to measure 1.2 grams or 0.6 grams of anything!

EASY APPLESAUCE-COCONUT CUPCAKES
25 g white sugar
10 g brown sugar
15 g vegetable oil
20 g vegan milk (I use So Delicious Coconutmilk)
20 g unsweetened applesauce
1/2 tsp vanilla extract
1/4 tsp almond extract
1/4 tsp white vinegar
30 g flour
10 g unsweetened finely-shredded coconut*
1/8 tsp salt
1/8 tsp baking powder
1/8 tsp baking soda
1. Preheat the toaster oven or regular oven to 350F/180C and line a small muffin tin with two cupcake liners sprayed with cooking spray.
2. In a small bowl or mug add the white sugar, brown sugar, oil, milk, applesauce, vanilla extract, almond extract, and vinegar. Whisk everything together until well combined. I have a few mini whisks that are excellent for this type of job.
3. Sift in the flour and add the coconut, salt, baking powder, and baking soda. As you can see, I nearly forgot to add the coconut when I was making this video and I added it after I had already started to mix the ingredients! Doh!
4. Gently mix and fold until just all the ingredients are incorporated. I still use the whisk for this step, but there is no vigorous whiskin' involved! Too much whisking and mixing at this point will give you a tough and chewy cupcake.
5. Pour the cake batter into the prepared cupcake liners and bake for 20 minutes or until a toothpick inserted in the center comes out with only a couple of moist crumbs. (See notes for toaster oven instructions.)
NOTES:
. I get all discombobulated when I'm filming a recipe video, and even though I've made these cupcakes dozens of times I still managed to forget to add the coconut along with the other dry ingredients. I added the flour, salt, and rising agents, and then proceeded to merrily mix my batter. THEN I remembered the coconut and added it in. Ideally, you would add the coconut in with the rest of the dry ingredients so you only have to mix the batter once. *Insert FACE PALM emoji here*
. If you're baking these in a toaster oven and the top heating elements are only a couple of inches away from your cupcakes, you may want to bake it on the WARM setting (still at 350F/180C) for 12 minutes, and then switch to the BAKE setting and continue to bake for another 8 minutes or until a toothpick inserted in the center of a cupcake comes out mostly clean. My oven is a Cuisinart TO-60 and the top heating elements are too close to the cupcakes, which means the cupcakes come out dome-like and with cracked tops if I bake them only using the BAKE setting. The WARM setting of my oven only heats from the bottom, so it gives the cupcakes a chance to rise without getting all domey and crackly. Oven brands and models vary, so definitely check your toaster oven's manual to see how your heating elements work for all the different settings if you're not sure!

Hello and welcome to In the Kitchen with Matt, I am your host Matt Taylor. Today I am going to teach you how to make Amazing applesauce muffins. They are super delicious, easy to make, and they are cheap. Let’s get started. Ok, for the ingredients, we need four cups of flour, two cups of sugar, two large eggs, two cups of applesauce, one cup of melted butter, one teaspoon of vanilla extract, finally one teaspoon of cinnamon, and one teaspoon of baking soda. First what we are going to is we are going to cream the butter with the sugar. Now what we want to do is we want to add the eggs. Then, we are going to add one teaspoon of vanilla extract. Next, let’s transfer this mixture of sugar, and butter, and extract, and we will go right in with the applesauce, we will get it all in there. Ok now, I am going to add my baking soda and my cinnamon to the flour. And I will wisk this up really well. And Now I am going to add my mixture to the flour. And let’s mix it all together. Scrape the sides a little bit, so we can get the extra flour all mixed in. And let’s go ahead and preheat the over to 350. Take our bowl here, and we can start filling the cups, about 3 quarters full. And then once you have all your cups filled with the batter, let’s go ahead and put these in the oven, remember 350 degrees, and we will cook them for twenty to twenty-five minutes, until they are risen and they are about golden brown, and then what you are going to do is take a toothpick and stab it with a toothpick, pull it out, if it is nice and clean you are good to go. If there is a little bit of batter left on it, put it in for a couple of more minutes. See you when they are done. Ok the muffins are out of the oven and ready to be eaten. First, here’s the breakdown. It took about 15 minutes for the prep and about 25 minutes for the baking time. Total cost $3.64, that makes it about 15 cents per muffin. That is awesome, 15 cents for a muffin. Now, I have never seen applesauce muffins at the store, at least my store, maybe they have some where you live. But uh, yeah, I mean 15 cents for a muffin, can’t beat that. So if you have a bunch of applesauce lying around, and you don’t want to eat it all, why don’t you make some muffins, these things are fantastic. So I am going to have one. Oh yeah, oh, oh, mm, mmm, mmm. Yeah, these are amazing. Mm, mm, not super sweet, a little dense.
