How To make Apple Thyme Jelly
Ingredients

cup
apple cider
3 1/2
cup
sugar
2
teaspoon
thyme, leaves, fresh
1
each
fruit pectin, liquid, 3 ounces
Directions:
Combine the cider, sugar and thyme in a 4-quart microwave-safe bowl, and stir well.
Cook, uncovered, at full power (650 to 700 watts) for 10 minutes. Stir, return to the microwave, and cook until the sugar has dissolved and the mixture has reached a full rolling boil, about 5 more minutes.
Stir the pectin into the mixture, return it to the microwave, and cook for 1-1/2 minutes.
Skim any foam off the surface, and pack the jelly into sterilized jars according to the manufacturer's directions.
Makes 1 quart.
Note: A delicate flavor - just perfect for glazing a simple lamb or pork roast.

#1 Apple harvest and homemade apple jelly with thyme
Finally time for apple harvest! Today we make our favorite jelly from our apples in the garden.
We have three old apple trees in our garden; Ringstad, Belle de Boskoop and Melon Apple. For this recipe on apple jelly we have used the Melon Apple.
Recipe:
Apple juice
9 dl sugar/liter juice
dried thyme
Press the apples into juice. Mix the apple juice with sugar and dried thyme. Heaten it up and let's boil without lid in 10 minutes (let it boil without stiring).
You can test when your jelly is finished by doing the spoon test. Start by placing a small amount of jelly on a plate, which you put in the freezer for a minute. If the jelly wrinkles when you pushes a spoon through the cold jelly, it is done. If it's still is loose you can boil it for another 5 minutes. When the jelly is ready you remove the pan from heat and let it rest for 5 minutes. Finally, pour the jelly into glass jars.

Apple Berry Salsa with Cinnamon Chips
Ingredients
Chips
4 (7-inch) flour tortillas
1 TBSP granulated sugar
1/2 tsp ground cinnamon
Salsa
1 cup strawberries, sliced
1 kiwi, peeled & chopped
1 small orange
2 medium Granny Smith Apples
2 TBSP packed brown sugar
2 TBSP apple or apricot jelly
Preheat oven to 400 degrees. For cinnamon chips, lightly spray tortillas with water. Combine sugar & cinnamon & sprinkle over tortillas. Cut each tortilla into 8 wedges; place in single layer on 15″ round baking stone. Bake -10minutes or until lightly browned & crisp. Remove to nonstick cooling rack; cool completely.
Peel, core and slice apples. Coarsely chop apple slices. Dice strawberries and kiwi. Add to bowl. Zest orange to measure 1 tsp. zest. Juice orange to measure 2 T. juice. Add orange zest, juice, brown sugar and jelly to fruit mixture; mix gently. Refrigerate until ready to serve. Serve with baked cinnamon chips. I also found this to be a wonderful topping to frozen yogurt.
