1 1/2 c Unsweetened bottled apple -juice 1 pt Fully ripe strawberries 3 1/2 c Granulated sugar 1 Pouch liquid fruit pectin Pour apple juice into a preserving kettle or large saucepan. Thoroughly crush the barries, using a potato masher, one layer at a time; measure 1/2 cup prepared berries; add to apple juice; add sugar. Place pan over high heat; bring to boil, stirring continuously; at once, stir in liquid fruit pectin; bring to a full rolling boil; boil hard for 1 minutes,stirring continuously; remove kettle from heat. Skim off foam with a metal spoon; pour quickly into hot sterilized jars, leaving 1/2 inch head space; seal with melted paraffin wax; cover with clean lids. Stor in a cool, dark, dry place. **NOTE** Bottled Strawberry cocktail can be substituted for the fresh strawberry juice, giving a slightly sweeter product. Makes 3-1/2 cups. Home-made Strawberry Jam Recipe | Fresh Strawberry Jam with basic ingredients | Chef Sanjyot Keer
Full written recipe for Strawberry Jam
Prep time – 10 minutes Cooking time – 1 hour Serves – 450 grams
Ingredients: • Strawberries 900 gm • Sugar 400 gm • Salt a pinch • Vinegar 1 tbsp
Methods: • Wash the strawberries thoroughly and pat dry them, further trim if the head with the leaves and cut the strawberries in quarters or smaller chunks as per your preference, if you like you jam to be smooth, I like my jam to be little chunkier. • Transfer the chopped strawberries in a wok, most preferably use a non-stick wok, add sugar, salt a pinch and vinegar, mix well and then switch on the flame to low heat. Addition of salt and vinegar will bright up the colour, flavours and also help to maintain the shelf life. • Lightly stir until the sugar dissolves completely, continue to cook on low flame while stirring in regular intervals and throughout the cooking process, by now the mixture will turn slight watery. • Once the strawberries have softened mash them with help of the spatula. • After 10 minutes of cooking increase the flame to medium flame. • The cooking process will melt & cook the sugar and also breakdown the strawberries. Once the sugar has melted, it’ll start to boil and has also thickened slightly. • Remove and discard the froth formed on the top while cooking. • After cooking for 45-60 minutes, check for its readiness by, dropping a dollop of jam on a plate, allow to cool down for a while and tilt the plate, if the jam slides, it’s runny and you need to cook it for few more minutes and if it stays, strawberry jam is done. • Make sure not to cook too much, as the jam will thicken as it’ll cools down.
For storing the jam: • Store the jam in a well sterilized glass jar for maintaining its shelf life, for sterilizing, set water in a stock pot and boil the glass jar, spoon and tong for few minutes, make sure the glass used should be heat proof. Remove from boiling water and let the steam escape & the jar dries completely. • Now add the jam in the jar, you can add the jam even if it’s warm, close the lid and re dip in the boiling water for few minutes, in order to increase the shelf life. • To store the jam in the fridge, allow the jam to cool down to room temperature after the second dip and you can refrigerate it for good 6 months.

Strawberry Jam Recipe in English:
Ingredients: -Strawberries 600 gms -Cheeni (Sugar) 1 Cup -Lemon juice 1 & ½ tbs -Boiling water
Directions: -Cut strawberries and remove the stem. -Reserve 1 cup of strawberries for later use. -In blender jar,add strawberries and blend to make a puree. -In pot,add strawberry puree,1 cup strawberries,sugar,mix well and cook on low flame for 15 minutes. -Add lemon juice,mix well and cook on low flame for 20-25 minutes and check by ice cold plate technique method. -In boiling water,add air tight jar and sterilize for 5-6 minutes then remove jar from the water and drain on a clean towel. -Transfer strawberry jam to sterilized jar. -Let it cool down for 10 minutes & refrigerate until use. -Can be stored in an air tight container for up to 6-7 months.

Directions: -Strawberries ko cut ker ka stem ko remove ker lein. -1 cup strawberries ko bad mein use kernay kliya side per rakh dein. -Blender jar mein strawberries dal dein aur blend ker ka puree tayyar ker lein. -Pot mein strawberry puree,1 cup strawberries aur cheeni dal ker ache tarhan mix karein aur halki ancch per 15 minutes kliya paka lein. -Lemon juice dal ker ache tarhan mix karein aur halki ancch per 20-25 minutes kliya paka lein aur ice cold plate technique method sa check ker lein. -Boiling water mein air tight jar dal ker 5-6 minutes kliya sterilize ker lein phir jar ko pani sa nikal ker clean towel sa saaf ker lein. -Sterilized jar mein strawberry jam ko dal dein. -10 minutes kliya thanda ker lein aur istamal kernay tak refrigerate ker saktay han. -Air tight container mein dal ker 6-7 months tak store ker saktay han.
