How To make Apple Thyme Jelly
Ingredients

apple cider

thyme, leaves, fresh

fruit pectin, liquid, 3 ounces
Directions:
Combine the cider, sugar and thyme in a 4-quart microwave-safe bowl, and stir well.
Cook, uncovered, at full power (650 to 700 watts) for 10 minutes. Stir, return to the microwave, and cook until the sugar has dissolved and the mixture has reached a full rolling boil, about 5 more minutes.
Stir the pectin into the mixture, return it to the microwave, and cook for 1-1/2 minutes.
Skim any foam off the surface, and pack the jelly into sterilized jars according to the manufacturer's directions.
Makes 1 quart.
Note: A delicate flavor - just perfect for glazing a simple lamb or pork roast.

Makes about 375g (13oz)
Ingredients:
1kg (2¼lb) cooking apples, chopped
50g (2oz) fresh mint, roughly chopped, plus extra 2tbsp
25ml (fl oz) lemon juice
50ml (2fl oz) cider vinegar
Golden caster sugar
1. Put apples in a stockpot or large pan. Add mint and 600ml (1pint) cold water.
2. Bring to boil then reduce heat, cover and simmer for about 1hr, or until apples are soft and pulpy, adding lemon juice and vinegar for last 5min of cooking.
3. Strain mixture through a colander lined with muslin, set over a large bowl. Once all liquid has passed through, discard pulp.
4. Measure liquid and pour into a pan add sugar, using 225g (8oz) sugar for every 300ml (½pint) liquid.
5. Stir over a low heat, without boiling, until sugar has dissolved. Bring to boil uncovered, without stirring, for about 10min or until jelly sets when tested on a cold saucer. Put a teaspoon of jelly on saucer, push with a finger and it will wrinkle if set.
6. Turn off heat and stand for 10min, then stir in extra mint.
7. Pour into hot sterilised jars and seal immediately.

Sunny's It's Apple Thyme! Glazed Bacon

Ingredients
1/4 cup apple jelly
2 tablespoons chopped fresh thyme
1 tablespoon cinnamon sugar
1/2 teaspoon applewood liquid smoke
1 Granny Smith apple, peeled, cored and chopped into tiny cubes
Kosher salt and coarsely ground black pepper
12 to 16 strips bacon
Directions
In a large bowl, mix the jelly, thyme, cinnamon sugar, liquid smoke, apples, a tiny pinch of salt and several grinds of coarse black pepper. Set aside.
Line a baking sheet with nonstick aluminum foil and lay the bacon strips on top. Set the oven to 400 degrees F and place the bacon in the oven as it preheats. Bake until most of the fat is rendered, about 20 minutes. Remove from the oven and use paper towels to blot as much excess fat as possible.
Place a wire rack on the baking sheet and lay the bacon back on top. Brush or scoop the glaze over the bacon. Bake until the apple bits are golden and the bacon is crisp, an additional 20 to 30 minutes. Let cool for a few minutes before serving.
