2 teaspoons baking powder 1 teaspoon ground cinnamon
1/4 teaspoon baking soda 1/4 teaspoon salt 2 large
eggs 1 cup sour cream 1/4 cup (1/2 stick) butter, melted 1 cup diced unpeeled apple, preferably a tart apple such as Granny Smith or Greenings Heat oven to 375 F. Grease muffin cups or use foil baking cups. Put streusel topping ingredients into a medium-size bowl. Mix with a fork, then crumble with fingers until mixture looks like chopped walnuts. To make the muffin batter, thoroughly mix fllour, sugar, baking powder, cinnamon, allspice, baking soda, and salt in a large bowl. Break eggs into another bowl. Add sour cream and melted butter, and whisk until well blended. Stir in diced apple. Pour egg mixture over flour mixture and fold in just until dry ingredients are moistened. Scoop batter into muffin cups. Top each muffin with about 2 teaspoons of the streusel topping. Bake 20 to 25 minutes, or until browned. A toothpick inserted into the center should come out clean. Today I will be demonstrating how to make very moist & delicious Apple Streusel Muffins! They are so easy to make and just amazing!
Recipe:
2-1/4 cups all purpose flour
1/4 teaspoon cinnamon
2/3 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup softened butter at room temperature
1 cup buttermilk
1 large egg
2 medium apples peeled and diced in small pieces (about 1 cup)
1 teaspoon vanilla extract
Streusel:
1/2 teaspoon cinnamon
1/4 cup brown sugar
2 tablespoons of cold butter cut in small cubes
2 tablespoons all purpose flour

Cinnamon Crumble (Streusel Topping)

Bake in static preheated oven at 170 °C / 340 °F for 25 minutes and let cool to let the cinnamon crumble part solidify, they also taste better while still lukewarm, enjoy!

Makes 12 muffins
Ingredients:
For the muffins:
2 Apples
1 Egg, large
1/2 cup (120ml) Milk
1/3 cup (80ml) vegetable oil
1¼ cups (160g) Flour
2 teaspoons Baking powder
1/4 teaspoon Salt
3/4 cup (150g) Sugar
1 teaspoon Vanilla extract
For the crumble:
1/4 cup (60g) Butter, cold
1/2 cup (65g) Flour
1/2 cup (100g) brown Sugar
1 teaspoon Cinnamon
Directions:
1. Preheat oven to 350F (175C). Line a 12-cup muffin pan with muffins liners, spray the cups with oil (optional) and set aside.
2. Make the muffins: In a bowl mix milk, oil, egg and vanilla extract. Set aside.
3. In a separate bowl, combine flour, baking powder, sugar and salt.
4. Peel the apples and cut into small chunks. Place apple chunks into the flour mixture and toss well to ensure the apples are well coated.
5. Pour the wet mixture into the dry mixture and mix until combined.
6. Scoop the batter into muffin cups until 3/4 full.
7. Make the crumble: Combine the ingredients for the crumble topping together in a small bowl and crumble together using your finger tips.
8. Sprinkle some crumble on top of each muffin batter. Bake for 20-25 minutes, until a toothpick inserted into the center comes out clean.
9. Let cool before serving.
