How To make Apple Pie Bread
2 C All-purpose flour
unbleached
1/2 C Rolled oats :
old-fashioned
1 T Baking powder
1 T Baking soda
1 T Ground cinnamon
1/4 Ts Salt
1 Lg Egg
1 Lg Egg white
1/2 C Brown sugar, packed
1/4 C Honey
1 Tb Vegetable oil
1 C Buttermilk
1 1/4 C Apples unpeeled

finely chopped, 1 to 2 app
Preheat oven to 350 degrees; coat a 9 x 5-inch loaf pan with nonstick cooking spray. Whisk the flour with the oats, baking powder, baking soda, cinnamon and salt; set aside. Beat the egg, egg white, brown sugar, honey and oil with an electric mixer on medium speed until smooth. Add the buttermilk and beat again. Stir the flour and apples into the batter by hand just until combined. Scrape the batter into the prepared pan and bake for 50 to 60 minutes, or until a toothpick inserted in the center of the loaf comes out clean. The crust may crack. Cool in the pan on a wire rack for about 10 minutes. Turn out onto rack and cool completely. Makes 1 loaf. Penny Halsey (ATBN65B). Nutrition Analysis: 158 calories, 2g fat.

- 1/2 cup (95g) packed light brown sugary
- 1/2 cup (106g) granulated white sugar
- 2 teaspoons (4g) ground cinnamon
- 1/2 teaspoon (1g) ground allspice
- 1/2 teaspoon (4g) fine sea salt
- juice of 1 lemon
- 1 tbsp (9g) corn starch dissolved in 2 tablespoons (21g) water
Pie Crust:
- 2 1/2 cups all-purpose flour (375g), plus extra for rolling
- 3/4 cup unsalted butter, very cold, cut into 1/2 inch cubes
- 1.5 teaspoons (10g) fine salt
- 2 teaspoons (10g) sugar
- 6 to 8 tablespoons (108g) ice water
Baked Version:
- Puff pastry or pie dough...

- 1/2 cup (100g) granulated sugar
- 1.5 teaspoons (5g) ground cinnamon
- 1/2 teaspoon (2g) garam masala
- 1/4 teaspoon ground nutmeg

- 1/4 cup (55g) granulated white sugar
- 2 teaspoons (5g) ground cinnamon

- 1 tbsp (7g) corn starch dissolved in 2 tablespoons water

Ingredients:
•⅔ light brown sugar
•2 teaspoons cinnamon
•1 cup (2 sticks) salted butter
•1 ⅓ cups sugar
•4 eggs
•1 tablespoon vanilla extract
•3 cups all purpose flour
•4 teaspoons baking powder
•1 cup milk
•4 peeled & diced apples
Directions:
•Preheat an oven to 350 degrees.
•Grease 3-4 bread pans.
•Peel, core and dice the apples. Then, set them aside.
•In a bowl, stir together the light brown sugar and cinnamon and set aside.
•Using a stand mixer with the paddle attachment, cream on high the salted butter and sugar for 3 minutes, or until light and fluffy.
•Mix in on high the eggs and vanilla extract for 5 minutes.
•Mix in on medium the all purpose flour and baking powder for 20-30 seconds.
•Mix in the milk on medium for 30 seconds.
•Scoop ½ of the batter into the prepared bread pans.
•Sprinkle ½ of the brown sugar/cinnamon mixture over the batter in the bread pans.
•Scoop ½ of the apple pieces into the batter in the bread pans.
•Scoop the rest of the batter into the bread pans.
•Sprinkle the rest of the brown sugar/cinnamon mixture over the batter.
•Scoop the rest of the apple pieces into the batter.
•Swirl the contents of each bread pan to ensure the apples, brown sugar and cinnamon are distributed throughout the batter.
•Bake in a 350 degree oven for 35 minutes, or until a toothpick inserted in the middle comes out clean.
•Allow to cool.

BAKED APPLE PIE POCKETS
INGREDIENTS
3 Apples
1 Teaspoon Stevia Sweetener (or 2-3 Tbsp Regular Sugar)
1 Teaspoon Cinnamon
10 Whole Wheat Puff Pastry Squares
1 Egg
PREPARATION
1- Peel and dice apples.
2- Stir apples in a medium-size skillet over medium-high heat until they are tender (About 10 minuets).
3- Spoon apple mixture onto each square, whisk an egg and brush the outer rim of each square before folding them.
4- Using a fork, press the sides around each square to seal the filling in.
5- Using a knife, make 4 slits in each pie.
6- Brush the egg wash over the top of each pie then place them on a baking sheet.
Bake for 20 minutes or until golden brown.
