How To make Apple Phyllo Rolls
Butter flavored vegetable -cooking spray 2 c Apple -- diced
12 ts Ground cinnamon
1/4 ts Ground nutmeg
1 1/2 ts Brown sugar
9 Sheets commercial frozen
-phyllo pastry
thawed 3 tb Powdered sugar :
sifted
1 t Vanilla extract
1/2 ts -- water
Coat a nonstick skillet with cooking spray; place over medium heat until hot. Add diced apple; saute 8 to 10 minutes, stirring often. Add cinnamon, nutmeg and brown sugar; str well, and cook an additional 3 minutes. Remove from heat, and let cool. Coat a flat surface with cooking spray; place 1 sheet of phyllo on surface (keep remaining phyllo covered). Coat phyllo with butter-flavored cooking spray. Layer 2 more sheets phyllo on first sheet, coating each with
cooking spray. CUT Vertically into 5 equal strips; cut strips in half to make 10 pieces. Repeat process with remaining phyllo sheets, spraying each sheet with cooking spray. Spoon 1 1/2 tsp apple mixture at base of each strip; roll up, jelly roll fashion. Place, seam side down, on a baking sheet coated with cooking spray. BAKE at 375 deg for 30 to 35 minutes or until golen. Remove to wire rack to cool slightly. Combine remaining ingredients in a small bowl; stir well. Drizzle 1 1/2 ts glaze over each roll. Serve warm. some raisins (about 15g)
4 tbsp of any jam you like ( I used apricot jam)

Ambrosia Apple Tahini Phyllo Roll ups
Looking for a new appetizer idea that’s healthy and full of flavour? These savoury rolls filled with Ambrosia apples, walnuts, and tahini are just what you’ve been looking for.
These rolls give a nod to Turkish, Cypriot, and Greek baking but stuffed with an all-Canadian apple - the Ambrosia apple. They travel well, so they can be put in a packed lunch or brought to a potluck. And, they’re great warm out of the oven, cold, or reheated the next day!
Don’t be intimidated by the idea of working with phyllo pastry. Most grocery stores have phyllo sheets in the freezer section. Follow the instructions on the box for thawing. Most recommend that the pastry sheets sit at room temperature, out of the box (but not the plastic wrapper), for 2-hours prior to working with it.
If it’s your first attempt at working with phyllo, take your time - especially when pulling the raw sheets apart. Once it is out of the plastic wrapper, lay it flat and cover the phyllo with plastic or a cloth to keep it from drying out and becoming brittle. If you tear a sheet or there are little rips in the sheet - don’t worry about it. Because you’re going to have multiple layers, it will still hold together.
We used a 13” x 9” baking pan and all of the rolls fit in snugly. We prefer to line the pan with parchment paper but you could also grease the pan.
Roll these any size you like (fat, thin, long, or short). If you are serving them as appetizers, you could try accompanying them with a honey mustard sauce or spiced yogurt for dipping.
Here’s the recipe:
Ingredients:
2 medium Ambrosia apples (diced)
1 cup chopped walnuts
3 tbsp tahini
1 tsp honey
¼ tsp salt
1 box of frozen phyllo dough (2 sheets phyllo pastry per roll)
½ cup melted butter (for brushing on phyllo - olive oil can also be used)
Sesame seeds for sprinkling on top (optional)
Method:
Thaw phyllo pastry (follow manufacturer instructions).
Preheat oven to 350°F
Mix Ambrosia apples, walnuts, tahini, honey, and salt until the Ambrosia apples are coated.
Gently lay out one sheet of phyllo and brush on melted butter.
Add another sheet of phyllo pastry and brush half with butter. Fold the two sheets in half (you should now have four layers of phyllo).
Spoon in a row of filling.
Fold sides of phyllo in and roll.
Add one last stroke of melted butter to ‘glue’ the end of the roll.
Place in a parchment paper lined baking dish.
Brush tops with melted butter and sprinkle with sesame seeds.
Bake at 350° for 30 mins or until golden brown.
Can be served warm or cold.

Easy Apple Strudel made with Filo Pastry
Made with walnuts and easy filo pastry.
A simple Apple Strudel recipe. Apple strudel is a German and Austrian style dish that’s been well adopted by the Italians and many other countries. The classic strudel is made with apples but of course you can also use other fruits. Make sure you buy a good quality cooking apple so they don’t fall apart during the cooking process. This version is made using sheets of filo pastry, it’s not authentic I know, but it’s quicker and much easier than making it from scratch. I also like to toast the breadcrumbs so they resemble more of a biscuit base, this adds another level of flavour and also absorbs any moisture from the apples, resulting in a very crispy outside. I like mine packed with apples, but that’s a personal choice, you may like to roll them a little thinner. Either way, enjoy my Simple Apple Strudel with a side of vanilla bean ice cream or freshly whipped double cream
