It's National Baking Month and Katherine wants Phyllo Lemon Cheesecake.

Serves: 10
Prep time: 20 minutes
Bake time: 55 minutes
Special tools: 9-inch spring form pan
Ingredients:
12 sheets phyllo dough
1/3 cup butter, melted
1/4 cup sugar
1 teaspoon vanilla extract
2 lemons, juiced, zested and chopped
2 packages (8 ounces each) cream cheese, softened
1 carton (8 ounces) mascarpone cheese
2/3 cup honey
1/4 cup 35% cream
3 tablespoons all-purpose flour
3 large eggs, room temperature, lightly
Garnish:
2 pints raspberries
10 mint leaves
Icing sugar
Method:
1. Preheat oven to 425F degrees. In a stand mixer, whisk cream cheese, mascarpone, sugar and honey until smooth. Add eggs 1 at a time.
2. Softly add flour, cream, vanilla and lemon.
3. Butter phyllo sheets and wrap the bottom and sides of your cake pan evenly. Pour in your batter and bake for 55 minutes or until a toothpick comes out clean in the middle.
4. Remove and let rest for at least 3 hours (preferably overnight).
5. Garnish with raspberries, mint and icing sugar.

I think the best part of pastry is often that crunch made possible by a small(????????????) amount of butter or shortening. Sometimes the pastry dough can kind of overwhelm the filling or primary flavor. What's the solution? Filo dough! Paper thin sheets of dough that you butter and layer for the best crunch ever! They definitely allow the filling to shine through too. My mom would make all sorts of things with filo dough but the easiest way to use them IMO is to make little cups for the perfect party bites. Sweet and irresistible, these Philadelphia No Bake Mini Cheesecake in phyllo cups take about 20 minutes to make. The cream cheese filling with only 5 ingredients is ultra creamy. Store bought phyllo cups make for easy crispy mini crusts. These bite-sized desserts are always a huge hit!
Ingredients
3/4 cup heavy whipping cream
8 ounces Philadelphia cream cheese, at room temperature
1/2 cup powdered sugar, plus more for dusting
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
30 mini phyllo cups
30 blueberries
30 raspberries
mini chocolate chips
chocolate shavings from a bar of chocolate
Instructions
1. In large bowl, add the heavy whipping cream. Using a stand mixer or hand mixer, beat the cream until stiff peaks form. Set aside.
2. In a large bowl, add the cream cheese, powdered sugar, vanilla extract and cinnamon. Using a stand mixer or hand mixer beat on medium speed until the mixture is creamy, about 1-2 minutes.
3. Using a spatula, fold the whipped cream into the cream cheese mixture.
4. Fill each phyllo cup with some of the mixture. A piping bag with a large tip makes easy work of this. Or fill a large resealable bag and cut a small piece of the corner or a small cookie scoop.
5. Top each mini cheesecake with a blueberry, raspberry, mini chocolate chips and chocolate shavings. Dust with powdered sugar. Serve immediately or store in the refrigerator for up to 2 hours.
