Apple Pandowdy - Apple Pie in a Skillet Recipe You Will Love!!!
Welcome Back - today I'm making an old fashioned dessert called Apple Pandowdy which is like an apple pie (all the same ingredients - but it is made in a deep dish baking dish or skillet and uses a top crust which is broken up into pieces. Some people would call this a 'rustic dessert' and I really like the informal visual appeal of this dessert. It's one of those desserts you want to serve in the baking dish. Pieces of pie crust coated with sparkling sugar and apple filling bubbled up, served with a scoop of vanilla or caramel ice cream ---- YUMMMMM!!!! Anyway, here's the recipe!
Note on apples : I like to use Granny Smith in these apple pie/crisp/cobbler recipes - they are firm and they are tart enough. I also like to cut the apples into chunks for this recipe instead of thin slices like in a pie....
INGREDIENTS
6 tablespoons unsalted butter
4 pounds Granny Smith apples
⅔ cup packed brown sugar
1/4 C all-purpose flour, plus more for surface
1 tablespoon vanilla extract
2 teaspoons ground cinnamon
½ teaspoon kosher salt
1 Pie Dough Disc (store bought or homemade)
Sanding Sugar (for finishing the top of the pastry pieces)
1. Melt Butter on low on the Stove - brown it a little bit, then stir in the brown sugar and let it dissolve for about 5 more minutes. DO NOT caramelize
2. Cut Apples into Chunks
3. Combine brown sugar/butter mix, flour, Vanilla, Cinnamon and Salt
4. In a bowl, mix with the apples. Make sure apples are well coated.
5. Add apple mixture to a baking dish and level out with spatula.
6. Roll out pastry dough and cut into square pieces with a knife or pizza cutter.
7. Arrange square pieces on top of apples, leaving gaps.
8. Coat pastry pieces with egg wash (1 egg + 1 T Milk or Cream).
9. Sprinkle with sanding sugar.
10. Bake at 375 F for 45 minutes or until bubbly and pastry is golden brown.
Cool for 30 minutes and serve with ice cream.

2 tsp vanilla extract
1 tsp ground cardamom
1 tsp ground ginger
½ tsp fine sea salt
¼ tsp ground cloves
¼ tsp ground nutmeg
Directions
1. Take the frozen puff pastry out of the freezer at least 30 mins before you start to give it time to defrost.
2. Preheat the oven to 220℃/425℉.
3. Core, peel and slice each apple into 8 individual pieces (around ½ inch thick) and place them in a large mixing bowl.
4. Add the lemon juice and zest to the apples and mix to fully combine.
5. Add the brown sugar, 2 tbsp melted butter, flour, cinnamon, vanilla extract, cardamom, ginger, salt, cloves and nutmeg to the apples and mix throughly until evenly coated.
6. Pour the mixture into a medium baking dish and level out into an even layer.
7. Roll out the puff pastry to a relatively thin thickness and then cut into 1 inch squares then place on top of the apples, ensuring to push down the corners of the puff pastry squares to make sure they don't burn.

9. Remove from the oven and brush the top of the pastry squares with the remaining 2 tbsp melted butter.
10. Reduce the heat to 180℃/350℉ and bake for a further 30 minutes.
