How To make Apple Lemon Puff
1 1/2 teaspoons butter or margarine
1 small apple, peeled, cored & cut into rings
6 teaspoons sugar, divided
1 egg -- separated
1/2 teaspoon grated lemon peel
1/4 teaspoon vanilla extract
1/2 teaspoon all-purpose flour
In a skillet over medium heat, melt butter. Add apple rings; sprinkle with 2 teaspoons sugar. Cook until tender, turning once. In a mixing bowl, beat the egg yolk, lemon peel and vanilla for 1 minute. In another mixing bowl, beat egg white until stiff peaks form; fold in flour and remaining sugar. Fold into egg yolk mixture. Place apple rings in a greased 2-cup baking dish. Spread egg mixture on top. Bake at 350 degrees for 15-18 minutes or

Puff pastry triangles with jam and apple pieces: appetizing and irresistible!
INGREDIENTS
2 apples
1 tsp butter
2 tbsp brown sugar
1 tbsp lemon juice
1 tsp cinnamon
Milk
Almond slices
2 puff pastry rolls
Apricot jam
Powdered sugar
METHOD
Add butter to a skillet. Add an apple, peel, and cut into small pieces. Add lemon juice, cinnamon, and brown sugar. Let cook for 5 minutes.
Divide a circular puff pastry into 8 equal parts.
Add a tablespoon of jam and a tablespoon of the apple mixture.
Place another circular pastry puff on top. Use your hand to divide the 8 parts well. Cut the 8 pieces again and use your fingers to pinch the edges together.
Cover the entire puff pastry with milk and decorate with almond slices. Bake for 25 minutes at 180°C (356°F).
Sprinkle with powdered sugar to serve.

???? Lemon Custard Cream Puff Pastry Ingredients: Makes 12 Puff Pastry
1 egg yolk
1/4 cup (40g) sugar
3 Tbsp (20g) corn starch
1 cup (230ml) milk
zest of 1 lemon
juice of 1/2 lemon
1 box of store bought puff pastry (2 sheets)
powdered sugar (optional)
???? Lemon Custard Cream Puff Instructions:
1. In a sauce pan, add egg yolk, sugar, corn starch and mix. Add in milk, lemon zest, lemon juice and mix well. Move the sauce pan to stove and cook on a medium heat until custard thickens. Cover the custard with plastic wrap and set aside.
2. Preheat the oven to 350F (180C).
3. Using a pizza cutter, cut the puff pastry in 6 pieces. Take the first piece, make 6 slits on one side and brush with butter on non cut side. Fold the sheet in half and scoop some lemon custard cream and spread. Fold and secure all sides by pressing them together (must watch video tutorial).
4. Transfer the pastries to a baking sheet lined with parchment paper. Brush each pastry with little water and sprinkle some sugar on top.
5. Bake for 25-30 minutes or until golden.
6. Allow to cool for 10 minutes.
7. Sprinkle with powdered sugar (optional).

1. Slice the apples and take out the middle. Mix the sugar with cinnamon.
2. In a pan add the butter and apple slice. Sprinkle with sugar and lemon juice.
3. Caramelize for 1-2 min on each side.
4. Cut the pastry dough into squares. The size of the squares depends on the size of the apple slices.
5. Form the tarts and grease them with a beaten egg.
6. In the centre of the tart add a little apple jam.
7. Bake at 180C for 30 min.
