How To make Apple Knockers
1 (3") sticks cinnamon, broken
-into pieces 2 ts Whole cloves
1 c Sugar
1/2 ts Ground nutmeg
2 qt Apple cider
2 c Orange juice
1/2 c Lemon juice
Place cinnamon sticks and cloves in a large tea ball, or tie in a cheesecloth bag. Set aside. Combine sugar and nutmeg in a large Dutch oven, stirring well. Gradually add apple cider, orange juice, and lemon juice, stirring well. Add tea ball. Bring mixture to a boil; reduce heat, and simmer 15 mins. Remove tea ball; discard spices. Serve beverage warm. Yield: 2 1/2 qts. Sausages & Sauerkraut ~ Knockers and Kraut
This a delicious recipe and a great filling wintertime meal. With a little planning and prepping ahead, this can be a quick weeknight meal for your family! My husband is from Ohio (also of German ancestry) and many in his area eat this for New Years. I made it a couple of days early this year so you can get the ingredients in time if you wish to make this for New Years as well.
Note** I made a DOUBLE recipe. For a smaller family, cut this recipe in half.
4 lbs German Sausage (I used Bratwurst. Knackwurst, Bockwurst great as well. I have even used Kielbasa) boiled for 15 minutes
4 lbs red potatoes parboiled for 8-10 minutes
8 pieces of bacon chopped into bits (Click here to see how I make my bacon bits: )
2-3 medium onions diced small
3 lbs (48 oz) good quality Sauerkraut about 4 cups) you may drain and rinse, the kind I use, I do not find a need to
2 Tablespoons caraway seeds
1/4 cup brown sugar (click here to see how I make brown sugar )
1-1 1/2 cups thinly diced apple or 2 cups apple sauce
1 1/2-2 cups of water
pepper to taste
First things first. place sausages into a stock pot or dutch oven and cover with water. Bring to a boil. Let it boil for 15 minutes. Drain and set aside to let cool. Also, in a stock pot or dutch oven, cover potatoes with water (if leaving skin on be sure to scrub well) add 2 teaspoons salt and bring to a boil. Allow to boil for 8-10 minutes depending on the size of the potatoes. Drain potatoes and cover with cold water to stop the cooking process and allow to cool.
Dice up the bacon and set aside (I use kitchen scissors). After sausages have cooled, slice up and set aside. After potatoes have cooled, peel if desired or leave skins on and dice into bite sized pieces. Set aside.
Dice or mince the onions up and set aside. If you wish to rinse your sauerkraut, then rinse and drain and set aside.
NOTE** You can prep and boil the sausages and potatoes ahead of time. Likewise, you can cut the bacon and onions up ahead of time, makes for a quicker home hearty meal!
Start with bacon in a skillet or dutch oven large enough to hold all ingredients (allowing for stir room). Brown the bacon. When done remove from the pan and add in the sliced sausages. Stir until browned. Remove from pan and proceed to sauté the onions 3-5 minutes. Add potatoes, caraway seeds and brown sugar to the pot. Stir well and let cook for 4-5 minutes. Proceed to add the sauerkraut and stir well. At this point add enough water to keep moist and allow the potatoes to finish steaming in pan. Keep it moving and do not walk off. After 3-4 minutes add in minced apples or apple sauce. Stir well. Add the bacon and sausages, Incorporate well. Add in a bit more water in needed. Simmer for 5-10 minutes or until the potatoes are fork tender. Pepper to taste.

red or green bell pepper minced
mashed potatoes instead diced potatoes
garlic to taste

Servings: 4-5 servings
Ingredients:
+ 1 cup of chickpeas (canned or cooked)
+ 1 tbsp. tahini
+ Juice from ½ lemon
+ 1 heaping cup of fresh plantain leaves
+ 2 cloves of garlic (this will make a spicy hummus! To make it less spicy, roast the hummus, or add just one clove)
+ 1/8 tsp. salt
+ 2 tbsp. olive oil
+ 2 tbsp. water
