1 ts Baking soda
2 ts Pumpkin pie spice
Recipe by: The New Dr. Cookie Cookbook Preheat oven to 375 degrees; coat 2 cookie sheets with nonstick cooking spray. Combine the shredded apple, apple juice, granulated sugar and cranberries; set aside. Beat the egg, brown sugar, vanilla extract and oil with an electric mixer until smooth. Add the apple mixture and stir it into the batter by hand. Add the flours, cereal, baking powder, baking soda and pie spice; stir into the batter by hand. Let the batter sit for about 5 minutes to absorb all of the liquid. Drop by rounded teaspoonfuls about 2 inches apart onto the cookie sheets and bake for 10 to 12 minutes, or until the cookies are lightly browned. Cool on wire racks. Ingredients for the Apple Cookies:
For the Apple Filling:
4 big or 5 medium-size sweet apples (preferable red ones)
1/2 to 3/4 cups granulated sugar (depends on your taste)
1 tsp ground cinnamon (you can also add cinnamon sticks and as a different touch 2-3 cloves)
1/2 to 1 cup chopped walnuts or hazelnuts
For the Cookie Dough:
200gr. butter (at room temperature)
1/3 cup vegetable oil
3 heaped tbsp yogurt
1/2 tsp baking soda + 1 tbsp fresh lemon juice
3/4 cups granulated sugar (you can cut it to 1/2 cup if you prefer less sugar)
about 3-4 cups all-purpose flour (add 3+1/2 cups first then add more gradually to make a somewhat soft pliable dough)

These apple pie cookies are stuffed with delicious home made apple pie filling and caramel, then surrounded by flakey pie crust. These mini pies are absolutely additive, although I’m still not sure if they should be called mini pies, cookies or hand pies…
These mini apple pies are an autumn favorite of mine. I love the way this lattice looks and the taste! I can’t explain how delicious they are and a huge part of that is the home made caramel. Each bite has the perfect combination of apple, caramel and flakey crunch.
A FEW NOTES
*The recipe makes a lot of filling. You can repurpose the leftovers into extra for topping pancakes, ice cream, or snacking.
*It’s easiest to assemble the cookies on the prepared baking sheet as they can be difficult to transfer.
*If you’re short on time you can use frozen pastry dough; pre-made caramel and/or even store bought pie filling. That said, all the components are easy to make and you will DEFINITELY taste the difference if you take the time to make these from scratch.
