How To make Apple Chunk Cake
Mix all ingredients in one b 4 c Sliced apples; (unpeeled)
2 c Sugar
2 ts Cinnamon
1/2 c Oil
2 Eggs
2 c All-purpose flour
2 ts Baking soda
1/2 ts Salt
1 ts Vanilla
1 c Chopped nuts
Frosting: * Bake in 13 x 9 pan at 350, 35-40 min. Spray pan with Pam or grease it. Dust cool cake with powdered sugar, or frost with cream cheese frosting. This cake is best if baked one day ahead. If you're going to freeze the apples ahead, don't mix with any of these ingredients until you're ready to make the cake. Then defrost only enough to mix. * Cr. Cheese Frosting 1 lb box of powdered sugar, 2 sm pkg cream cheese, softened. Add milk to desired consistency. You can peel and slice your apples and freeze them to use later in apple crisp, apple pie, and apple chunk cake . When freezing for crisp or pie I line the pan with plastic wrap then fill with sliced apples (heap them up). After they're frozen remove from pan and wrap for the freezer. C. Erickson -----

Here is the recipe to make this Easy Apple Cake. It doesn't require any mixer or blender and the Apple Cake comes out moist and delicious.
EASY APPLE CAKE
Makes 6 – 8 Servings
DRY INGREDIENTS
1 1/2 cups of all purpose flour
1 1/2 cups of regular sugar
2 teaspoons of baking powder
4 tablespoons of butter or margarine.
WET INGREDIENTS
1 cup of milk
2 eggs and
1 teaspoon of vanilla extract
APPLE FILLING
2 sour apples like Granny Smith
1 tablespoon of lemon juice
1 tablespoon of sugar
½ teaspoon of cinnamon
INSTRUCTIONS
1. Preheat oven to 350 degrees Fahrenheit
2. Prepare the Dry Ingredients: a) In medium bowl add flour, sugar, baking powder and mix with a wire whisk. b) Add the cold, cubed butter to the mixture. c) Blend the butter into the flour until the flour is becomes grainy and there are no more big pieces of butter. d) Set aside
3. Prepare the Wet Ingredients: a) In a smaller bowl add 2 eggs and beat for 3 to 5 minutes until they turn a light yellow color and frothy. b) Add the vanilla and beat well. c) Add milk slowly while beating. d) Set aside.
4. Prepare the Apple Filling: a) In a medium bowl add lemon juice. b) Core, peel and slice apples. c) Add apple slices to bowl, stirring with lemon juice. d) Add cinnamon and sugar, and stir until it's all well blended. e) Set aside.
5. Butter and Flour an 8x8x2 inch square baking dish.
6. Grab the prepared Dry Ingredients and run a knife a little less than halfway down the dry ingredients. This smaller half of the dry ingredients will be the bottom layer of the cake.
7. Lightly spoon this smaller portion of dry ingredients into the baking dish, and lightly even it out with a fork, without pressing down.
8. Grab the prepared Apple Filling and place the apple slices over the dry ingredients in the baking dish. The apple slices should slightly overlap each other.
9. Add the remainder of the prepared Dry Ingredients on top of the apple filling, spooning dry ingredients lightly over the apple slices. Give the baking dish a slight shake so the cake evens out.
10. Grab the wet ingredients, give it one last stir and then pour gently over the entire cake.
11. VERY important: let the cake sit for 10 minutes so the liquids can get soaked into the dry ingredients.
12. Bake for 55 minutes
13. Let the cake cool, serve and enjoy!

Fresh Apple Cake
I cracked open grandma Jeans recipe box again today to make her Fresh Apple Cake. This has become my favorite fall cake, right up there with Mamaw's apple stack cake. You are going to love the flavors of this cake and how dang moist it is. Let me know what you think about this version and y'all enjoy.

Ingredients:
3 cups AP flour
1 1/2 teaspoon baking soda
1 tablespoon cinnamon
1 teaspoon salt
1 teaspoon allspice
1 teaspoon nutmeg
1 1/4 cup oil
2 cups sugar
2 eggs
1 cup chopped walnuts or whatever you like
1 cup coconut
2 teaspoons vanilla
3-4 medium sized apples diced (3 cups)
In medium size bowl mix together flour, soda, cinnamon, salt, allspice and nutmeg and set aside.
now in a large bowl mix the oil and sugar together till sugar begins to dissolve, then add eggs and mix to incorporate.
Add half the flour mixture to the wet mixture and stir in well. Add remaining flour mixture and mix to incorporate.
Add in the walnuts, coconut, vanilla and apples. stir well to mix all ingredients.
Pour in a prepared Bundt pan and bake at 325°F preheated oven for 60-65 minutes.
Let cool before cutting.

This recipe is wonderful! There is nothing worse than finding a recipe that is supposedly wonderful only to make it and have it be a huge waste of time, money, and ingredients. That won’t happen with this recipe. If you love apples and cinnamon you’re going to love this dessert. It is quite sweet but the glaze can easily be left off for those who prefer a dessert without much sugar.
Bake 50-60 minutes at 350 degrees.
Batter Layer
2 Eggs
3 Cups Flour
1 Cup Sugar
4 tsp Baking Powder
1 1/2 Cups Milk
1 Tbsp Vanilla
½ Cup butter
Apples
6 – Medium apples peeled, cored, and diced
¼ cup sugar
