MASON JAR Spice Cake Mix | Holiday Prep and Gift Giving
Another Mason Jar Mix recipe, this time ready spice cake. you can use this for muffins, cakes, dump cakes, it's up to your own creativity and inspiration. Perfect activity for rainy day pantry prep or holiday gift giving. Below is the list of ingredients for your dry mix as well as the standard instructions for making a cake.
Spice Cake - Dry Ingredients
1 1/4 C - Flour
1 C - Brown Sugar
2 tsp - Baking Powder
2 tbsp - Corn Starch
1/2 tsp - Ground Ginger
2 tsp - Pumpkin Pie Spice
WET INGREDIENTS
1/2 c whole milk
2 eggs room temperature
1 tsp. vanilla
1/2 c butter room temperature
INSTRUCTIONS
Place all dry ingredients in a bowl and sift to combine. If there are any lumps in your sugar be sure to get them out now. Pour all dry ingredients into a mason jar or air-tight storage container.
*If you do not have pumpkin spice you can use: 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp all spice and 1/4 tsp ground cloves.
WHEN READY TO BAKE
In a medium bowl add in eggs, milk and vanilla and beat together with fork. Set aside.
In a stand mixer cream butter until light and fluffy.
With the mixer on low, start by alternating the dry mixture and the egg mixture.
Pour 1/3 of the dry mixture into the creamed butter, then add 1/2 of the egg mixture. Continue alternating until all ingredients used. Turn off mixer, remove bowl and continue stirring by hand if any ingredients are not fully incorporated.
Bake at 350 for about 18 minutes in 8-inch round pans. Increase time to about 30 minutes for 9x13 pan and keep a close eye on it.
This recipe makes 14-16 cupcakes and they should bake for about 15 minutes.

Full Recipe:
A richly spiced apple cake filled with a perfect brown butter vanilla buttercream and topped with an intoxicating homemade caramel. This cake has all the fall flavors you love and is quite the crowd pleaser!
A FEW NOTES
You can save some time and skip browning the butter. You’ll still love the cake BUT definitely try that brown butter sometime!
If you’re not using 6-inch pans, double the recipe for 8-inch pans or triple the recipe for 9-inch pans.
You can substitute sour cream for the yogurt if desired, I do it all the time and can’t really tell the difference.
To get FLAT layers that are moist inside and out try using cake strips! You can buy a set or make your own from foil and paper towels at home. I made a whole blog post on it so check it out if you’re interested!

Happy Birthday to us! Here's my take on a jarred spice cake mix that can become a carrot cake, an apple cake, or even a hummingbird cake with the right additions. And it's perfect for 2 or 3, since this recipe makes just one of the 8-inch round cakes. For our birthday, I cut it in half and then stacked it and iced it for our birthday cake. Yes, my husband and I share a birthday. We were born on the same day in history, only a few hours apart. He was born in Alaska and I was born in Texas. We met in high school and started talking one day when someone asked him when his birthday was. I overheard his answer, and I said, hey that's my birthday too! Ahhh, it was meant to be!!

Spice/Carrot/Apple Cake in a Jar (or baggie)
For one 8-in round cake
In a pint sized jar, add:
3/4 cup minus 1 Tbsp flour
1/2 cup brown sugar
1/4 tsp ginger
1/2 tsp cinnamon
1 tsp pumpkin or apple pie spice (or sub 1/2 tsp cinnamon, 1/4 tsp allspice, 1/4 tsp nutmeg)
1/4 tsp kosher salt
2 Tbsp egg powder
1 Tbsp corn starch
1 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla powder
1 Tbsp instant milk powder
1/4 cup butter powder
Stop here for the spice cake mix
If making a carrot cake or apple cake mix, add 1/4 cup TL carrots (blended well in the blender) OR 1/2 cup granny smith apples broken into small pieces
You can also add a couple tablespoons of chopped nuts, coconut, TL pineapple, raisins, etc. Get creative, it's fun to try out new things!)
To prepare:
Add contents of jar or baggie to a medium bowl. Stir well.
Add 1/2 cup plus 1 Tbsp water to the mix
Stir until just combined
Allow to rest while oven preheats to 350 F
Place cake batter into a prepared 8-in round cake pan or 5 cupcakes
Bake at 350 for 18-20 mins (round) or 12-15 mins (cupcake) or until toothpick test comes out clean
Cool completely then frost the cake using cream cheese icing
Enjoy!!
You can easily double this recipe to make 2 cakes.

45 grams of granulated sugar
11 grams of cinnamon powder
2 apples
Cinnamon swirl
150 grams of light brown caster sugar
42 grams of cinnamon powder
120 grams of melted butter
Cake Mix
360 grams of all purpose flour
200 grams of granulated sugar
19 grams of baking powder
300 ml of whole milk
4 milliliters of vanilla extract
2 large eggs
110 grams of melted butter
Icing
200 grams of powdered sugar
40 milliliters of whole milk
◾Instructions
1. First peel two apples and cut them in squares.
2. Then add 45 grams of granulated sugar and 11 grams of cinnamon powder in a mixing bowl. Mix everything together.
3. Add the apples to the mixing bowl and coat them with the sugar/cinnamon mix.
4. Get a bowl and add 150 grams of light brown caster sugar, 42 grams of cinnamon powder and 120 grams of melted butter. Mix everything together.
5. For making the cake mix add 360 grams of all purpose flour, 200 grams of granulated sugar, 19 grams of baking powder, 300 milliliters of whole milk, 4 milliliters of vanilla extract, 2 large eggs and 110 grams of melted butter to a mixing bowl. Mix everything together.
6. Add the coated apples in the cake mixture.
7. Next add the batter to the baking tin.
8. Then add the cinnamon swirl on top of the batter. Use a knife to make the pattern.
9. Bake the cake for 40 - 45 minutes (160℃).
10. For the icing mix 200 grams of powdered sugar with 40 milliliters of whole milk.
11. When the cake is finished baking let it cool for 15 minutes.
12. After cooling put the icing on top. Let the cake cool for another 30 minutes.
