Homemade Applesauce, Fried Apples, and Squash Apple Bake - #244 of Consolidated Cooking Crave
On this episode of Consolidated Telcom Channel 18's Cooking Crave, Rhonda and Laverne show you how to prepare Homemade Applesauce, Fried Apples, and Squash Apple Bake. Cooking Crave is one of many original programming shows produced in southwestern North Dakota from Consolidated Telcom Channel 18.
Homemade Applesauce
3 Golden Delicious apples, peeled, cored and quartered
3 Fuji apples, peeled, cored and quartered
1 cup apple juice
2 Tbsps. cognac or brandy, or apricot juice
2 Tbsps. butter
3 Tbsps. honey
1/2 tsp. ground cinnamon
In a large saucepan, combine the apples and remaining ingredients. Bring to a soft boil and continue cooking until the apples are soft, 20-30 minutes. Used a hand blender or potato masher, blend to desired consistency. Serve warm immediately or chill for later use.
Fried Apples
3 Tbsps. butter
10 tart apples, peeled, cored and sliced
1-2 tsps. cinnamon
2/3 cup brown sugar
1/4 cup water or apple cider
Melt butter in a skillet, then add the remaining ingredients. Simmer over medium heat, covered, until the apples are tender. Remove the lid from the pan and continue to cook until the liquid has reduced to a thick syrup, sitting occasionally, about 15 minutes. Delicious over vanilla ice cream.
Squash Apple Bake
2 lb. butternut or buttercup squash
3/4 cup brown sugar
1 1/2 tsp. salt
1 tsp. cinnamon
6 Tbsps. butter
2 tart apples, cut in large chunks
Preheat oven to 350 degrees. Remove skin and fiber from squash, cut into chunks. Place into a greased 9” x 13” pan. Place apples on top and around squash. Mix sugar, flour, salt, and cinnamon; sprinkle over the apples. Dot with butter. Bake covered for 50-60 minutes.

Calico Bean Bake
Today I'm sharing a fantastic side dish for your summertime cookouts that doubles as an easy weeknight dinner--my mom's Calico Bean Bake.

Calico Bean Bake recipe
1/2 lb. ground beef
1/2 c. ketchup
3/4 c. brown sugar
1/4 c. white sugar
1 tsp. salt
1 tsp. apple cider vinegar
1 tsp. dry mustard
1 can baked beans
1 can kidney beans, drained and rinsed
1 can butterbeans, drained and rinsed
1 can stewed tomatoes
4 slices bacon, cooked and crumbled
In a large nonstick skillet, brown the ground beef over medium heat until cooked through. Drain any excess grease. Mix all of the ingredients except the bacon into the cooked ground beef. Bake at 350* for about 45 minutes. Sprinkle the crumbled bacon overtop. ENJOY!

How to Bake Apples at Home
A baked apple can be a delicious dessert idea, especially during the fall season. Learn how to bake apples from this instructional video from BHG.com. Choose a good baking apple, and then slice the stem end of the apple. Use a melon baller to remove the apple core, leaving the base intact. Place the apples in a baking dish and stuff with your favorite filling. Pour liquid into the baking dish around the apples to help them steam. Bake apples at 375 degrees for about 45 minutes or until tender, spooning liquid over the apples occasionally. Remove the apples from the oven and enjoy this sweet treat while they're still warm.
