1 lb Angel Hair or Capellini
: uncooked 2 TB vegetable oil
1 TB minced garlic
5 c tomatoes :
diced
1/2 ts basil
3/4 c low-sodium chicken broth
5 TB Parmesan cheese
: Salt and freshly ground : pepper to taste Prepare pasta according to package directions; drain. Heat oil in a large skillet over medium-high heat. Add garlic and cook for one minute. Add tomatoes, basil, salt and pepper. Cook for 3 minutes. Add hot pasta to skillet; toss well. Add chicken broth and stir. Toss with Parmesan cheese and serve immediately. Angel Hair with Fresh Tomato Sauce

Ingredients
Kosher salt
1 1/2 pounds ripe on-the-vine tomatoes, finely chopped
1/4 cup good-quality olive oil, plus more for drizzling
4 cloves garlic, very thinly sliced
1/4 teaspoon crushed red pepper flakes
12 ounces angel hair pasta
1 cup freshly grated Parmesan cheese, plus more for serving
1/4 cup sliced basil
Directions
Bring a large pot of salted water to a boil.
Put the tomatoes in a large bowl. Heat the olive oil and garlic in a small saucepan over medium heat until the garlic is translucent, but not at all browned, 1 to 2 minutes. Stir in the crushed red pepper flakes, then pour the garlic oil over the tomatoes. Add 1 teaspoon salt and toss to coat.
Cook the pasta according to package directions. Transfer the pasta directly from the boiling water to the bowl with the tomatoes using a pasta fork or tongs. Sprinkle in the Parmesan and some of the basil and toss to coat; let stand 5 minutes so that the sauce absorbs slightly. Top with the remaining basil and a little additional olive oil and serve with additional Parmesan.

Meal prep - angel hair pasta with Roma tomatoes, basil, and garlic
So it's a bit challenging cooking with just one butane burner. This dish lends itself well to that because I can use my tri-level pot to boil the water and cook the pasta, then strain it through the steamer basket into the double boiler sectioned. I can use the frying pan first to cook the garlic tomatoes and basil and set it aside while the pasta Cooks.

This pasta with sun dried tomatoes and spinach in a garlicky white wine sauce with lots of fresh basil and parsley makes the perfect flavor combination. Angel hair or Cappellini work well for this easy 15-20 minute pasta recipe. I hope you enjoy this spinach sun dried tomato angel hair recipe!

SPINACH SUN DRIED TOMATO PASTA
INGREDIENTS
1 pound angel hair pasta (or whatever you like)
1 (10 ounce) jar oil-packed sun dried tomatoes - drained, sliced
¼ cup extra virgin olive oil
3/4 cup dry white wine
6 cloves garlic - sliced
8 ounces baby spinach
1/4 cup packed basil leaves - chopped
1/4 cup parsley - minced
2 cups pasta water - reserved, will most likely not need all of it.
salt - to taste
½ teaspoon crushed red pepper flakes - optional
Parmesan cheese - for serving
INSTRUCTIONS
1. Bring a large pot of salted water (2 tablespoons kosher salt) to boil. Heat a large pan to medium-low heat. Wait 2 minutes then add the olive oil and garlic. Sautee garlic until golden (about 2-3 minutes), then add in the chili flakes and cook for 30 seconds more.
2. Add the sundried tomatoes and cook for 1 minute more.
3. Next, add the white wine and turn heat to medium-high. Cook wine until it reduces by half )about 3 minutes) then turn heat back to medium-low. Cook the pasta. Angel hair only takes a couple of minutes, so watch carefully and cook to al dente.
4. Add a ladle of pasta water and the pasta to the pan. Toss to coat and emulsify the sauce. Cook for 30 seconds, then turn the heat off. Add more pasta water if needed so that the pasta does not dry out.
5. Next, add the spinach and basil to the pan and toss once more. Taste test and adjust salt to taste.
6. Serve with a drizzle of extra virgin olive oil and parmesan cheese on the side. If the pasta gets at all dry while waiting to eat, add a couple ounces of pasta water to loosen things up. Enjoy!
