Angel Hair Pasta with Fried Chili Flakes, Lemon and Arugula

Ingredients
1/2 cup extra-virgin olive oil, plus 2 tablespoons
2 cups panko bread crumbs
Kosher salt and freshly ground black pepper
3 cloves garlic, slivered
1 teaspoon dried red pepper chili flakes
1 lemon, zested and juiced
1 pound angel hair pasta
6 cups lightly packed wild arugula (Israeli if possible)
1/2 cup grated Parmigiano-Reggiano
Directions
In a dry skillet over low heat, add 2 tablespoons of olive oil and the panko bread crumbs and toast until golden brown. Season with salt and pepper, to taste. Put into a bowl and set aside.
Set the skillet pan back over medium heat and add the remaining 1/2 cup of olive oil, the garlic and the red pepper flakes. Saute for 2 to 3 minutes to infuse the oil and cook the garlic. Season with salt and pepper, to taste. Add the lemon zest and remove from the heat.
In a large pot of well-salted boiling water, over medium heat, add the angel hair pasta and cook for 3 to 4 minutes. Drain and add to a large mixing bowl. While still warm, toss in the arugula, the infused oil, the bread crumbs and the cheese. Using tongs gently fold everything together and transfer to a large serving bowl or platter to serve. If desired, serve with braised braciole.

15 Minute Spinach and Sun Dried Tomato Angel Hair
This pasta with sun dried tomatoes and spinach in a garlicky white wine sauce with lots of fresh basil and parsley makes the perfect flavor combination. Angel hair or Cappellini work well for this easy 15-20 minute pasta recipe. I hope you enjoy this spinach sun dried tomato angel hair recipe!

SPINACH SUN DRIED TOMATO PASTA
INGREDIENTS
1 pound angel hair pasta (or whatever you like)
1 (10 ounce) jar oil-packed sun dried tomatoes - drained, sliced
¼ cup extra virgin olive oil
3/4 cup dry white wine
6 cloves garlic - sliced
8 ounces baby spinach
1/4 cup packed basil leaves - chopped
1/4 cup parsley - minced
2 cups pasta water - reserved, will most likely not need all of it.
salt - to taste
½ teaspoon crushed red pepper flakes - optional
Parmesan cheese - for serving
INSTRUCTIONS
1. Bring a large pot of salted water (2 tablespoons kosher salt) to boil. Heat a large pan to medium-low heat. Wait 2 minutes then add the olive oil and garlic. Sautee garlic until golden (about 2-3 minutes), then add in the chili flakes and cook for 30 seconds more.
2. Add the sundried tomatoes and cook for 1 minute more.
3. Next, add the white wine and turn heat to medium-high. Cook wine until it reduces by half )about 3 minutes) then turn heat back to medium-low. Cook the pasta. Angel hair only takes a couple of minutes, so watch carefully and cook to al dente.
4. Add a ladle of pasta water and the pasta to the pan. Toss to coat and emulsify the sauce. Cook for 30 seconds, then turn the heat off. Add more pasta water if needed so that the pasta does not dry out.
5. Next, add the spinach and basil to the pan and toss once more. Taste test and adjust salt to taste.
6. Serve with a drizzle of extra virgin olive oil and parmesan cheese on the side. If the pasta gets at all dry while waiting to eat, add a couple ounces of pasta water to loosen things up. Enjoy!

15-minute Cherry Tomato Pasta
1 lb pasta of choice
3-4 garlic cloves, thinly sliced
¼ cup extra virgin olive oil
2 pints cherry tomatoes
6-7 leaves fresh basil, thinly sliced
1 tsp black pepper
Salt to taste
¼ cup fresh parmesan cheese (add more if you like)
Pasta water as needed
Bring a large pot of water to a boil seasoned with salt.
In a large skillet pour the olive oil and add in the thinly sliced garlic.
Turn the heat to medium heat and let the garlic infuse with the oil until golden brown, this should take about 3-4 minutes.
At this point you can cook the pasta when water is at a boil, so it will be ready at the same time as the sauce. Cook the pasta shy 2 minutes of al dente as per package directions.
Add in the whole cherry tomatoes and stir them around until they soften and start to burst. You can use a wooden spoon to help with this until it reaches a saucy consistency, this takes about 7-8 minutes.
Add in fresh basil. Season with pepper and salt.
Drain pasta (but reserve the water) and add it in to the skillet. Pour in about ½ cup of the pasta water and stir.
Keep stirring the pasta around the skillet for about 2 minutes.
Adjust for seasoning and pasta water, and add parmesan cheese as you like.

Blushing Angel Hair Pasta

Ingredients
3 tablespoons extra-virgin olive oil
4 large cloves garlic, grated
Kosher salt
1/3 cup tomato paste
1 pint cherry tomatoes, halved
1 cup heavy cream
10 ounces angel hair pasta
1/2 cup finely grated pecorino
Directions
In a large skillet, warm the olive oil and garlic over medium heat. Add a pinch of salt and 2 tablespoons water. Simmer until the water cooks out and the garlic becomes tender, about 2 minutes. Stir in the tomato paste with 2 more tablespoons water and cook to fry the paste for a minute in the oil, stirring. Add the cherry tomatoes and cook over medium heat until they soften, 1 to 2 minutes. Add the cream. Season with salt to taste. Keep warm.
In a large pot, bring 4 quarts water to a rolling boil. Add a generous handful of salt. Bring the water back up to a boil. Add the pasta and cook, stirring with a slotted spoon to make sure it does not clump or stick to the bottom, until al dente, 3 to 4 minutes. Reserve 1/2 cup pasta cooking liquid and drain the pasta in a large colander.
Add the hot pasta right from the colander to the skillet and toss to coat with the cream. Shut the heat off and allow the pasta to rest for 2 minutes. If too thin, gently warm and reduce over low heat for 1 to 2 additional minutes. If it becomes too thick, simply thin it out with some of the reserved pasta cooking liquid. Serve topped with the cheese.
Cook’s Note
This is about heating and searing the garlic and tomato paste for a minute to intensify their flavors. Those strong flavors are still pulsating underneath the layer of cream that connects the pasta and sauce here. To me, this is a 1988 dream dish; easy and fancy restaurant retro, and therefore, super chic again. This dish can be fortified with sauteed shrimp, steamed and shelled clams or any other types of seafood. If using, stir in the cooked, warm seafood at the last minute.
