How To make Grilled Portobello Mushrooms Over Angel Hair
2 Portobello mushrooms
2 tablespoons olive oil
Essence of Emeril
see recipe 1 cup heavy cream
1 cup grated St. John's Cheese
1 teaspoon minced garlic
Salt and pepper 3/4 pound fresh angel hair pasta
:
cooked al dente tossed with olive oil 2 tablespoons chopped chives
1 3 ounce block St. John's Cheese -- for shaving
* WITH ST. JOHN'S CHEESE SAUCE Preheat the grill. Season each mushroom with olive oil and Essence. Place on the grill and grill for 3-4 minutes on each side. For the sauce: In a hot saute pan, add the cream. When the cream starts to bubble and thicken, whisk in the cheese. Season with the garlic, salt and pepper. Simmer the sauce for 2-3 minutes. In a pot of boiling salted and oiled water, drop in the fresh pasta for about 2 minutes, remove, drain, and add directly to the sauce. Remove the mushrooms and slice on the bias into 2-inch slices. Using a pair of tongs, place three nests of pasta in the center of the platter. Spoon the remaining sauce over the pasta and around the plate. Arrange the mushroom around the pasta. Garnish with hand-shaved cheese and chives.

FILLETS WITH PORTOBELLO SAUCE | THE RECIPE IS SIMPLE

Ingredients:
4 – Beef fillets.
3-4 – Shallots.
300 gr – Portobello mushrooms.
4 – Potatoes.
1 glass – White wine.
500 ml – Cream.
20 ml – Bertolli Mild & Delicate Olive Oil Spray
Preparation:
Peel the potatoes. Cut them in half. Boil until they are tender. Heat a skillet on high.
Dice the shallot finely and fry it.
Slice the portobellos. Add the portobellos and shallot to the skillet. Leave to almost entirely evaporate.
Season with salt and pepper. Once browned, add white wine.
Drain the potatoes. Add two tablespoons of cream. Add salt and pepper. Mash into a smooth purée. Add cream.
Sear the beef on both sides. Take out of the pan and let it rest.
Serve the fillets with purée and sauce.

INGREDIENTS:
1 lb linguine pasta, cook according to package instructions
2 chicken breasts, cut into strips
Seasoning: salt, pepper, garlic powder, and paprika
2 tbsp cooking oil, divided
8 oz sliced mushrooms
1/2 a medium onion, diced
1 garlic clove, minced
1/4 cup white wine
1 1/2 cups chicken broth
2 cups heavy cream
1/2 cup grated parmesan cheese
Fresh parsley for garnishing
Directions:
1. Cook pasta according to package instructions. Reserve 1/2 cup of pasta water.
2. Season chicken breast with salt, pepper, garlic powder, and paprika.
3. Add 1 tbsp of cooking oil to a large pan and cook chicken for 5-8 min. Transfer cooked chicken to a bowl.
4. Add 1 tbsp of cooking oil to the same pan. Add mushrooms. Lightly season with salt and saute for 3-4 minutes.
5. Add onion and garlic. Saute until fragrant.
6. Drizzle white wine and simmer until liquid reduces.
7. Next pour in chicken broth followed by the heavy whipping cream.
8. Return chicken to the pan.
9. Add grated parmesan cheese.
10. Season to taste.
11. Add cooked pasta and toss well. Add pasta water as needed.
12. Garnish with fresh parsley.
13. Enjoy!!
