蘆筍什菌天使麵配牛油果
材料:
1. 天使麵 200g
2. 什菌 (例如鮑魚菇、白珍菇、蘑菇、鮮冬菇)
3. 蘆筍 (切段) 60克
4. 牛油果(切粒) 1/2個
5. 忌廉 150ml
什菌醃料:
1. 豉油 1/2茶匙
2. 白胡椒 小許
3. 糖 1/2茶匙
4. 粟粉 1茶匙
調味:
1. 蔬菜油 適量
2. 鹽適量
3. 胡椒粉適量
4. 清酒 兩茶匙
做法:
1. 滾水下少許油及鹽,放入天使麵煮3-5分鐘(可依照包裝袋說明),盛起備用。
2. 將什菌分別去蒂及洗淨,瀝乾,並以豉油、白胡椒、糖調味,醃制5-10分鐘,沾上粟粉。
3. 將牛油果切粒加小許鹽和胡椒粉拌勻,盛起備用。
4. 冷鑊下油,中火燒熱釋出微煙後調較細火,下蘆筍略炒,加點水蓋上蓋煮至軟身,然後加入什菌,灒清酒後炒至金黃色。
5. 加入忌廉及水慢煮至合適濃度
6. 放上牛油果粒炒勻,將醬汁淋於天使麵上,即成。
Asparagus, Mushrooms Angel Hair with Avocado
Ingredients:
1. Angel Hair 200g
2. Mixed Mushrooms ( Abalone Mushroom, White Hon Shimeji Mushroom, Mushroom, Shiitake Mushroom)
3. Asparagus (cut strips) 60g
4. Avocado (cut cube) 1/2
5. Cream 150ml
Marinade:
1. Soy Sauce 1/2 tsp
2. White Pepper - little
3. Sugar 1/2 tsp
4. Corn Flour 1 tsp
Seasonings:
1. Vegetable Oil - little
2. Salt - little
3. Pepper - little
4. Sake 2 tsp
Method:
1. Boil water, add in little oil and salt when boiled, then add in angel hair and cook for 3-5mins (as per package), scoop out and set aside.
2. Wash , drain and remove stem of mushrooms, marinate (except corn flour) for 5-10mins, then apply corn flour on mushrooms.
3. Mix the avocado with little salt and pepper together, set aside.
4. Heat the oil in wok with medium heat, turn to low heat when smoke belch. Sautéed asparagus, add some water and cover until soft. Then add in mushrooms, pour in sake and stir-fry until golden.
5. Pour in cream and water, cook with low heat until the density as you wish.
6. Put in avocado cube, stir well. Pour the sauce on the angel hair. Serve.
Asparagus, Jamur Malaikat Rambut dengan Alpukat
Bahan:
1. Rambut Malaikat 200g
2. Jamur Campuran (Jamur Abalon, Jamur Putih Shimeji Hon, Jamur, Jamur Shiitake)
3. Asparagus (potongan strip) 60g
4. Alpukat (potong kubus) 1/2
5. Krim 150ml
Mengasinkan:
1. Kecap 1/2 sdt
2. Lada Putih - sedikit
3. Gula 1/2 sdt
4. Tepung Jagung 1 sdt
Bumbu:
1. Minyak Sayuran - sedikit
2. Garam - sedikit
3. Lada - sedikit
4. Sake 2 sdt
Cara memasak :
1. Rebus air, tambahkan sedikit minyak dan garam saat direbus, lalu tambahkan rambut malaikat dan masak selama 3-5 menit (sesuai paket), ambil dan sisihkan.
2. Cuci, tiriskan, dan buang batang jamur, rendam (kecuali tepung jagung) selama 5-10 menit, kemudian oleskan tepung jagung pada jamur.
3. Campur alpukat dengan sedikit garam dan merica, sisihkan.
4. Panaskan minyak dalam wajan dengan api sedang, nyalakan api kecil saat asap bersendawa. Tumis asparagus, tambahkan air dan tutup sampai lunak. Kemudian tambahkan jamur, tuangkan sake dan tumis sampai emas.
5. Tuang dalam krim dan air, masak dengan api kecil sampai kepadatan sesuai keinginan.
6. Masukkan kubus alpukat, aduk rata. Tuang saus di rambut malaikat. Dan siap di hidangkan.
