How To make Andouille Smoked Sausage In Red Gravy
6 tb Unsalted butter
1/2 c Chopped green peppers
1 1/2 lb Andouille smoked sausage
(2-inch pieces) 1 ts Minced garlic
8 ts Tomato sauce
3 c Onions
1/4 c Chopped parsley
6 1/2 c Pork or beef stock
1 c Chopped green onion tops
1 1/2 ts Cayenne pepper
3 ts Cooked rice
3/4 ts Salt
1/2 c Chopped celery
Melt butter in Dutch oven. Add sausage, cover, and cook without stirring about 7 minutes. Turn over and sprinkle 2 c. of onions on top. Cover and cook another 7 minutes. Should be dark brown sediment on pan bottom. Add 3/4 c. of stock and scrape bottom. Add pepper and salt, stirring, scraping,
and turning. Cover and cook 2 minutes, scraping once. Add celery, green peppers and garlic. Cover and cook 3 minutes, scraping once. Add tomato sauce and cook uncovered 5 minutes, scrapping occasionally. Add 1/2 c. onions. Cook 8 minutes until large puddles of oil have broken out and tomato mixture is thick. Stir only if sticking. Add parsley and 1/2 c. of the green onions. Add 3-1/4 c. more stock and scrape. Cook 20 minutes until liquid is thick dark red gravy. Stir occasionally. Stir in remaining stock and onions. Bring to boil, reduce heat, and simmer, stirring frequently, about 14 minutes, until gravy is noticeably thicker but still juicy. Remove from heat and serve immediately.

Morton’s nature seasoning
Creole seasoning
4 tablespoon of flour
4 tablespoon of cooking oil
When you cook your rice remember for every cup of rice two cups of water. Cook long grain rice for at least 18 minutes. Check rice package for specifics.

Authentic Red Beans and Rice with Andouille Sausage
This Cajun classic is the perfect dish for the winter to come. Hearty, cheap, filling and flexible, we think it belongs in your kitchen tonight!
Red Beans and Rice Dish Guide
Serves 4-6
16 oz andouille or other smoked sausage
16 oz dry red kidney beans
6 cups chicken/veggie stock or water
1 medium yellow onion, diced
3-4 ribs of celery, diced
1 green bell pepper, diced
3 cloves of garlic, minced
1 T olive oil
2 T hot sauce such as crystal or Texas Pete
3 bay leaves
2 t smoked paprika
½ t chipotle powder
Pinch of cayenne pepper (to taste)
1 t dried oregano
½ t ground thyme
½ t onion powder
½ t garlic powder
3 green onions, sliced thinly
Salt and Pepper to taste
1 cup (dry) basmati rice, cooked per package directions.
Slice the sausage into coins or half-moons. Add the olive oil to a large pot or dutch oven over medium heat and cook the sausage until golden brown and rendered (about 5 minutes). Remove sausage and set aside. Add the celery onion and bell pepper to the pot and cook, stirring often, for 4-5 minutes or until softened. Add the garlic, paprika, chipotle powder, cayenne, oregano, thyme, onion and garlic powder and stir, cooking out for 1-2 minutes.
Add the beans, stock or water, and bay leaves. Season with salt and pepper and bring to a simmer. Cover and cook at a simmer for an hour and 30 to 40 minutes or until the beans are soft enough to smash against the side of the bowl with a spatula (may take more time depending on your beans).
Using the spatula or a potato masher, smash up some of the beans so they release their starch into the cooking liquid. This will thicken the liquid so smash as much as you wish depending on your desired consistency. Add the hot sauce and cook uncovered for 20-30 minutes more until the beans are creamy and the stock has reduced a bit. Stir in the sausage, remove the bay leaves and taste for seasoning. Add a splash of water if the beans get too thick.
Serve in a wide bowl with a spoonful of steamed rice, garnished with a dash more hot sauce and some of the sliced green onions.
