Andes Mint cookies are a Christmas Cookie staple at our home! We make these delicious chocolate cookies without fail every Christmas at least once, and they are a hit at every Christmas party.
Chocolate Andes mint cookies have a few easy steps to make them, and taste so rich and yummy! An Andes Mint is melted over the top of each cookie, then cools and hardens into a tasty top on the cookies.

Andes Mint Cookies

The ingredients for this dish are 175 grams of all purpose flour, 1/2 tsp baking soda, 1/4 tsp baking powder, 1/4 tsp salt, 1/2 cup unsalted butter at room temperature, 3/4 cup of sugar, 1 egg, 1/2 tsp mint extract, 8-10 drops of green food coloring, and a package of andes mints, about 28 mints to precise.
First, we will take care of the mints. Unwrap all of the lovely little chocolates and chop them up with a knife… or don’t, you could easily just break them in half. Move them to a prep bowl and set aside.
Sift together the flour, baking soda, baking powder, and salt into a medium bowl or onto a flexible cutting mat.
In a separate bowl, cream together the sugar and butter. Add the mint extract and the egg and thoroughly combine.
Add the dry goods into the wet ingredients in three small installments, stirring each in before adding the next one.
Next, add the food coloring in and stir to even out the color. Finally, fold in the chopped up mints.
Using a 2 tablespoon disher you can get about 20 cookies out of this batter, so you’ll want to double the recipe if you want to make more… or just make smaller cookies.
Make sure you flatten the cookies a bit with your fingers before baking them since the batter is a bit on the stiff side.
Bake at 375 degrees for 8-12 minutes. Next time I make the recipe, I am definitely going to break the mints in half instead of chopping them up, I think they will look better in the cookie this way

Ingredients
1 cup unsalted butter melted and cooled at least 10 minutes¹ 226g
1 cup light or dark brown sugar* tightly packed 200g
3/4 cup granulated sugar 150g
1 large egg + 1 egg yolk room temperature preferred
1 1/2 teaspoon vanilla extract
2 3/4 cups all-purpose flour 350g
1 Tablespoon cornstarch
1/2 teaspoon baking soda
1/2 teaspoon baking powder
3/4 teaspoon salt
1 heaping cup chopped Andes mint chocolate candies this was 28 Andes candies for me, and conveniently packs are generally sold as 28 count
1/3 cup mini chocolate chips
Instructions

00:29 Combine melted, cooled butter, brown sugar, and granulated sugar in a large bowl and stir until well-combined. Stir in eggs and vanilla extract. Set aside.
01:16 In a separate bowl, whisk together flour, cornstarch, baking soda, baking powder, and salt.

01:45 Add mint chocolate candy pieces and mini chocolate chips and sir well.
02:01 Cover bowl with plastic wrap and refrigerate for at least 30-60 minutes.
15 minutes before you're ready to begin baking your cookies, preheat oven to 350F (175C).
02:15 Remove cookie dough from refrigerator and scoop dough by heaping 1 1/2 Tablespoon-sized balls and drop onto parchment paper lined baking sheet². I like to roll the dough between my palms to get uniform, round cookies but you do not have to. Space cookie dough at least 2 apart on baking sheet.
02:42 Transfer to 350F (175C) preheated oven and bake cookies 12 minutes or until edges are light golden brown The centers of the cookies may still seem a little underdone but allow the cookies to cool completely on the baking sheet. They'll finish baking there and this is key to keeping them nice and soft.

Notes
¹The butter should not be hot to the touch or it could melt your sugar and then your cookie dough will be runny and will spread all over your baking sheet ²If you don't have parchment, just bake directly on an ungreased cookie sheet.
