How To Make Chorizo

CHORIZO RECIPE:
Ingredients
3 lbs pork shoulder
2 tbsp of salt
9 Guajillo peppers
6 Ancho peppers
1 cup of apple cider vinegar
3 tbsp of paprika
6 garlic cloves, minced
2 bay leaves
1/3 tbsp ground black pepper
½ tbsp of ground cumin
¾ tbsp Mexican oregano
½ tbsp dry marjoram
½ tsp coriander seeds
½ tsp dry thyme
6 cloves
½ tsp ground allspice
Sausage casings
Butcher’s twine
Directions
1. Cut pork shoulder into small pieces. Place the meat in the refrigerator, this will make the meat easier to handle.
2. Setup your grinding attachment in your mixer with the coarser blade and grind the meat.
3. Wipe the peppers clean. Remove the stems and cut lengthwise. Remove seeds, toast the peppers in a pan and place in a bowl. Cover with hot water and let sit for 30 minutes.
4. Meanwhile, grind the spices and dry herbs using a spice or coffee grinder.
5. Discard water and place the peppers in a blender. Add the vinegar and garlic cloves and puree until smooth; strain through a fine strainer, set aside.
6. Place the ground pork in a large bowl. Add the ground mixture of herbs and spices. Mix well. Add the chili sauce and combine until well mixed.
7. Stuff pork mixture into casings.
8. Place in the refrigerator for a day to season in a well-covered glass container. This step will enhance the flavor better.

Tacos al Pastor on the Grill
In the taco world, there are many, many types of tacos to choose from. From chicken all the way to tongue, the options are endless. There is one type of taco that always hits the spot for me though and that is tacos al pastor. The beautifully marinated meat on the spike or spit just hits right. If you go to some taco joints, there will be a spinning spit with al pastor meat rotating and cooking away. Well with the Trompo King, you can duplicate the incredible sensation of biting into your favorite taco stand taco, right in the comfort of your own home or casa.
A Trompo King is a stainless-steel dish that has a vertical spike that screws into the center of it. They come in different sizes so you can use them on small grills as well as the biggest smokers. Drinks from Skyrim | How to Drink
Real world versions of drinks from Skyrim, as served by Talen-Jei at the Bee and the Barb in Riften! I used to be an adventurer, like you, but then I took an arrow to the knee.

Skyrim is a few years old now but remains hugely popular, and it boasts a thriving community of players and modders who are keeping the thing going and going and going. I haven't played it myself in a bit, but I have thoroughly enjoyed the time I spent in Skyrim, and I've been thinking about making drinks from it for a long time. It doesn't hurt that Drinks from Skyrim is one of the most common requests I get, so let's do it. Looking at Skyrim there's a few options I can go with, Skooma comes to mind of course, but since Skyrim actually has three legitimate cocktails in its setting, it seems silly to start with anything else, so I'll have to save the Skooma for another day. I'm instead going to focus on the drinks served by Talen-Jei, the bartender and owner of the Riften bar called The Bee and The Barb. He's got three speciality cocktails on the menu, and they all sound pretty great, so I'm recreating those here.
White Gold Tower
• .75 oz. -or- 22 ml. Lavender Syrup
• 1 oz. -or- 30 ml. Heavy Cream
• 1 oz. -or- 30 ml. Cognac
• 2 oz. -or- 60 ml. Mead
• Shake & Strain
Velvet LeChance
• 5 blackberries
• 1 oz. -or- 30 ml. honey syrup
• 1 oz. -or- 30 ml. Amaro Di Angostura
• 1 oz. -or- 30 ml. Antica Formula Vermouth (typo in video makes this 2 oz. don't do that)
• muddle
• 1 egg white
• Dry Shake, Shake & Strain
Cliff Racer
• .5 oz. -or- 15 ml. cinnamon syrup
• .25 oz. -or- 8 ml. bénédictine
• .5 oz. -or- 15 ml. ancho reyes chile liqueur
• 1.5 oz. -or- 45 ml. cognac
• stir & strain

Slow Cooker Mole with Chicken | Rick Bayless Taco Manual
Yes, you could buy a mole paste, simmer it briefly with chicken stock and stir in coarsely shredded chicken for quick-and-easy, oh-so-Mexican chicken tacos. But the truth is, I haven’t found a mole paste in the United States I can whole heartedly recommend. So, to offer you the simplest path to this quintessentially Mexican flavor, I put together this unorthodox, super-streamlined mole recipe using a slow cooker, one that turns out a very respectable, satisfyingly delicious red mole to mix with chicken. I typically start the mole early in the morning, spending about 20 minutes getting everything sauteed and simmering in the slow cooker. Then I come back to it a couple of hours before serving to puree the mix, and do the final simmer seasoning. Two notes: First, this recipe gives you about 10 cups of mole, which is comically more than you need for the tacos. But it is the smallest batch you can successfully make in the slow cooker, and, besides, it freezes well and is more than welcome on a plate with poached or grilled chicken and as the sauce on enchiladas. Second, I wish I could tell you to make it with all ancho chiles—the most easily available dried chile—but the mole doesn’t come out with a true Mexican flavor; you need to have the complexity that the other two dried chiles add.
