The Best Chewy Chocolate Chip Cookies~Amish Recipe with Pudding in the Mix!
If you love chewy chocolate chip cookies, you need to bake up a batch or two of these and enjoy with a glass of cold milk! These chocolate chip cookies were inspired by a recipe shared with me by some Amish friends and they stay chewy & fresh for days with the addition of pudding mix added to the dough! Also, no need to chill the chocolate chip cookie dough before baking!

Chewy Chocolate Chip Cookies:
1/2 cup butter (salted or unsalted, softened)
1/2 cup of shortening (such as Crisco, softened)
1 cup of brown sugar (dark or light both work fine)
1/4 cup granulated sugar
2 eggs (room temperature )
*1 pkg of instant vanilla pudding (102 gram or 3.5 oz package~butterscotch or chocolate pudding works well too to change up the flavour of your cookies)
2 cups plus 2 tbsp's all purpose flour
1 & 1/2 tsp's vanilla extract
1 tsp baking soda (not baking powder)
1/4 tsp salt
2 cups semi sweet chocolate chips (or dark chocolate broken into pieces) plus, some chips to decorate tops of dough balls before baking (optional) You can adjust the amount of chocolate chips you add to your cookies too!
...follow directions in video and bake at 375 degrees for 9-11 minutes. Oven temperatures vary, so check your cookies at 9 minutes...do not over bake if you want soft and chewy cookies.
~makes about 2 dozen cookies
*if you use cooked pudding and pie filling mix, use a good 1/2 cup of pudding powder...your cookies will be slightly more thin than using instant pudding but they are still delicious.

1 tsp. vanilla or lemon flavoring
4 1/2 c. flour
1 tsp. baking soda

INGREDIENTS
4 1/2 cups (576g) all-purpose flour
1 tsp. baking soda
1 tsp. McCormick Cream of Tartar
1 cup (2 sticks or 226g) salted butter, room temperature
1 cup (224g or 8 ounces) vegetable oil
1 cup (200g) granulated sugar
1 cup (125g) confectioners sugar
2 (3.50 ounces - 4.0 ounces) large eggs room temperature
2 tsp. McCormick Pure Vanilla Extract
INSTRUCTIONS
Pre-heat oven to 375°F and line a few baking sheets with parchment paper. (I bake them at 350°F in a convection oven)
In a large bowl, whisk together the flour, baking soda, and cream of tartar. Set aside.
In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter, oil, and sugars on medium-high speed until light and fluffy, scraping the sides as necessary.
Reduce speed to medium and add the eggs, one at a time, mixing just until combined.
Add the vanilla and mix until combined.
Reduce speed to low and add the flour in three additions, scraping down the sides as necessary.
Using a scoop that holds 2 tablespoons of dough, drop batter onto the baking sheet, spacing at least an inch apart.
Bake for 8 to 10 minutes, just until the edges begin to darken.
Let cool on baking sheet.
